Pasta Primavera with Smoked Gouda
I normally don't care for pasta primavera much, but this batch disappeared! It's a healthy way to enjoy pasta, for sure! I like larger chunks of vegetables, because when the diced ones cook down they get mushy. So I chopped the veggies instead and added a tad more gouda. I think parsley's worthless, so I didn't add that. The red pepper flakes gave it a nice kick! I'll add more next time. Wonderful!

Adriel's Chinese Curry Chicken
I've had a hard time finding a simple recipe for curry, but at last it's here! For some reason Whole Foods didn't carry yellow curry paste, so I used green (which I typically prefer anyway) and it turned out wonderfully. I also added zucchini so I didn't feel too bad for eating so much starch. It's sweet, spicy, and delicious! Almost as good as my favorite Thai green curry.

Chipotle Crusted Pork Tenderloin
This is an amazing and VERY easy recipe for pork tenderloin. By far the best tenderloin I've had. I do agree with others that if you are using a high-quality chipotle (like from Whole Foods), you should use about 2/3 or 3/4 the amount. I LOVE hot foods, but the full 3 tablespoons had my sinuses and eyes burning for an hour. It took away from the flavor of a nice organic tenderloin. I say cut it down a bit and taste ALL the flavors. I cooked this in the oven following my Better Homes and Gardens cookbook: 425 degrees for about 20-30 minutes until meat thermometer registers 160 degrees. Let stand 10 minutes before carving.
