Mistakenly Zesty Pork Chops

I made this exactly as written and it was wonderful! I tried it again in my slow cooker and even though it came out juicer it was still very good, though not as good as when cooked as per directions. To make in the slow cooker I used frozen pork chops so I also didn't get to marinade them, either which detracted from the full flavor experience. Hubby really liked it too. This is a keeper.

Chow Mein with Chicken and Vegetables

To all those who say this meal doesn't have very much flavor, I want to remind you that chow mien is a mild dish with subtle flavors. It is not a heavily spiced or spicy dish. I prepared this dish exactly as written being very careful with accuracy in measuring. I followed the preparation as written. The chicken was very flavorful and moist. I did salt it slightly after browning it in the pan. The veggies added the right amount of crunch and sweetness. The flavor was subtle but I thought it was very flavorful. I cooked the noodles 5 minutes, and after assembling all the ingredients together, I brought the broth to a boil, then turned off the burner and let the noodle mixture sit for about 5 minutes. This let them absorb most of the liquid, which made them just the right consistency and the sauce thicker. This is the best chow mein recipe I have ever tasted. Thanks

Slow Cooker Beef Vegetable Soup

I mostly cook from fresh ingredients, even for soup, so I didn't think I would like this. But, I was looking for a quick, easy meal that I could make from stored food, so I tried it. It is delicious! I thought the vegetables would be mushy but they were fine. I didn't have canned potatoes so I cut up fresh and it was fine. The flavor was great, and the meat tender. I put all the ingredients into the slow cooker and cooked it on high for 6 hours, but turned it off after 5 hours because I came home from work and wanted to eat! I served it with nice crusty rolls and both hubby and I enjoyed it very much! It is a keeper.

Unstuffed Cabbage Roll

When I made this dish, my son and daughter-in-law were over with their little ones. They didn't stay for dinner but they did taste it and asked for the recipe! I used only 1 lb. of ground beef, a can of tomato soup instead of tomato sauce, a 15-oz. can of petite diced tomatoes, and a 15-oz. can of stewed tomatoes. I added one beef bouillon cube, about 1 tsp. Worcestershire sauce, and salt and pepper to taste. I also added 1 1/2 cups brown rice and 3 cups more water. I cooked it on the stove top in a large dutch oven for an hour stirring frequently. The rice took a long time to cook. Other than that I followed the recipe exactly. The Worcestershire sauce is probably unnecessary. I feel if I followed the recipe exactly it would have been just as delicious. A great tasting, easy to prepare meal!

Sweet and Spicy Stir Fry with Chicken and Broccoli

I took a few hints from reviewers and doubled the amount of sauce ingredients, plus I added about 1 tablespoon of brown sugar to balance out the heat. Instead of broccoli, I used snow peas which added another level of sweetness to the sweet/heat balance. I also added sliced scallions, fresh mushrooms, red bell pepper, and a rib of sliced fresh celery. Served it over brown rice. Hubby went back for seconds. This is a keeper. It is delicious.

Cuban Picadillo

What a delightful dish! Ok, I did make some changes after reading the reviews. I made half a recipe. I sauted the onions and garlic, then made the sofrito by adding to pot 16 oz. of tomato sauce, an equal amount of water, the chopped sweet red pepper, 1 tsp. oregano, 1 tsp. cumin, 1 tsp. coriander, 3/4 cup raisins, 1-5oz. jar of green olives sliced in half, a half jar of the olive brine, 1/8 tsp. hot pepper sauce, 1/8 tsp. red pepper flakes. I brought this to a boil, added the uncooked ground beef and let it all cook down. It tastes fantastic! The hot sauce and red pepper flakes did not make it hot, just mellow. I am serving it over brown rice. I was going to make coconut rice as another reviewer did, but decided the raisins made it sweet enough. I have not had much Cuban food in my lifetime and this is a real treat! Thanks to the other reviewers for their good comments, and thanks for the recipe!

Chicken Pot Pie II

Instead of pie crust I topped this recipe with Fluffy Biscuits by Nancy Horsburg from this site. It was incredible! It is my favorite chicken pot pie recipe. I even took it to my friend recuperating from surgery. I made everything as directed except the pie crust.

Stuffed Peppers My Way

I have made these twice using red peppers, and found it very delicious! I used cooked brown rice the second time and added some chopped olives (any kind). Used a better quality feta cheese the second time and it made a big difference in the taste and texture. You can add anything else you like to this dish (bits of chopped broccoli, small dices of meat/chicken/seafood, etc. and it will always be delicious. Makes a nice lunch all by themselves!

Romaine Rice Tuna Salad

This is a great recipe! I used 2 cans of tuna and a small can of black olive slices in addition to the rest of the ingredients. It has a great flavor. My husband and I enjoyed it very much. It is a simple and quick meal.

Slow Cooker Pot Roast

This was awesome! Best pot roast I have made so far. I forgot to buy beef gravy mix, so I substituted 3 tablespoons of cornstarch with 1 tablespoon of beef base and all the rest of the recipes I made as stated. The gravy came out thick but not gloppy, but I think 2 Tablespoons of cornstarch would have worked better. The meal was very flavorful and the meat tender. Hubby likes potatoes, so I microwaved some medium to small size whole potatoes with the skin on for 5 minutes on high, cut them into quarters and threw them in the crock pot for about 20 minutes before serving. The gravy coated them nicely. Everything was delicious!

Salsafied Chicken and Rice

I made this dish exactly as stated not expecting it to be all that great, but it was good enough for a weekday meal and for lunch the next day. It tasted fine, and could be made special by adding other ingredients as some other reviewers did. One thing I liked about it was that you could make it with items you have on your shelf and without fresh ingredients as it is nice to have a few meals like this in your recipe file.

Quinoa Vegetable Salad

I made this exactly as stated and even though I liked everything in it, there was something that didnt' "taste right". I decided it was the cilantro. Also I felt there was too much salt in the recipe. I would decrease the salt in the quinoa cooking by 1 tsp. With these changes, I think it would be 5 stars, but of course you would have to taste it in your own mouth! I did like it and plan to make it again. I served it to company and they didn't care for it, but I think it was the too much salt and cilantro that put them off. This is the first time I ever tried quinoa and while I find it pricey, I plan to try other recipes using it.

Cake Balls

I made these to give as part of cookie plates to friends over the holidays. I have to say I really didn't care for them and neither did those I gifted them to. They tasted all right, but just not as good as we had hoped and not enough to want to make them again. I made strawberry cake with cream cheese frosting dipped in milk chocolate, with some dipped in semi-sweet chocolate. They looked pretty but the consistency in your mouth is not what you expect. That and the flavor makes us not care for them.

Swirled Peanut Butter Cup Brownies

I made these exactly as the recipe stated and they came out perfect. I baked them for 33 minutes. I made them for my son-in-law when his family was visiting for the 4th of July. They got eaten so fast he barely got one! So I made another pan the next day so he could enjoy. If you are a chocolate peanut butter lover this is the recipe for you!

Kielbasa with Pasta

I too, tried this dish when my husband was dining elsewhere for the evening. I like kielbasa and he doesn't care for it. I used bow tie pasta and red sweet pepper omitting the green pepper. It tasted great! I thought this was a very imaginative invention with putting the butter and cheese on the pasta first, then adding the meat mixture to serve it. It tasted way better than I thought it would. Hubby tried a little when he came home and thought it was ok once but didn't want it in the rotation. That's ok. More for me, and it goes into my file for meals when he is away! Thanks Ann Dee!

Creamy Coconut Cake

This is a delicious cake, but I don't think it was as fantastic as other reviewers found it. Cool, moist and flavorful. We enjoyed it, and I will make it again but there are other cake recipes I like better.

Country Apple Dumplings

Oh my goodness, this is out of this world! I can't believe how delicious this is and how quick and easy it is to make! I made half a recipe using reduced fat crescent rolls, real butter, 1/2 cup white sugar and 1/4 cup brown sugar, and diet lemon lime soda. It is fantastic! I don't want to know how many calories there are in it because I am going to eat another one later, I don't care. You must try this. You won't be disappointed. Very company worthy and they look beautiful.

Baked Zucchini

I made this because I had the ingredients on hand and it seemed quick to put together. I thought it would taste just "all right". I was wrong! This is very tasty and delicious! My hubby liked it a lot too. It was a little mushy though as zucchini can get but I wasn't watching the time very closely so I may have cooked it a little too long.
