Coconut Cream Dessert

This is great! Made it for company and it did not disappoint. The super market didn't have instant pudding so I made cooked: 3 pkgs. with the 4 cups of milk. It did not get as firm as instant, but it tasted wonderful and I was able to cut and serve it.

Slow Cooker Beef Vegetable Soup

I mostly cook from fresh ingredients, even for soup, so I didn't think I would like this. But, I was looking for a quick, easy meal that I could make from stored food, so I tried it. It is delicious! I thought the vegetables would be mushy but they were fine. I didn't have canned potatoes so I cut up fresh and it was fine. The flavor was great, and the meat tender. I put all the ingredients into the slow cooker and cooked it on high for 6 hours, but turned it off after 5 hours because I came home from work and wanted to eat! I served it with nice crusty rolls and both hubby and I enjoyed it very much! It is a keeper.

Baked Beans II

This is delicious. I was in a hurry so I cooked it in the microwave thinking it wouldn't thicken. I microwaved the onion for one minute before adding to the dish. I also microwaved the bacon between paper towels for two minutes until crisp, then broke it in pieces, placed it on top of the dish, and microwaved, covered, on high power for 5 min. I stirred it, and put in back, covered for 5 more minutes. I repeated this twice uncovered, for 3 minutes each stirring each time and it got thick and very hot. I let it sit a little to cool while serving dinner and they tasted great. I know they would be better cooked in the oven, but I was very impressed with these beans. My husband went back and ate all the beans that were left in the dish! Not bad for under 20 min!

Country Apple Dumplings

Oh my goodness, this is out of this world! I can't believe how delicious this is and how quick and easy it is to make! I made half a recipe using reduced fat crescent rolls, real butter, 1/2 cup white sugar and 1/4 cup brown sugar, and diet lemon lime soda. It is fantastic! I don't want to know how many calories there are in it because I am going to eat another one later, I don't care. You must try this. You won't be disappointed. Very company worthy and they look beautiful.

Fluffy Biscuits

I have to admit I have never made this recipe to eat as just biscuits alone. My hubby doesn't like biscuits. When he goes out of town, I like to make chicken and biscuits and I always use this recipe for the topper. It is fabulous!

Delicious Ham and Potato Soup

This is great! I had never made potato soup before and this was very satisfying and didn't take very long to make. Tastes even better the next day. I used my hand blender to crush the potatoes somewhat. Great comfort food.

Baked Zucchini

I made this because I had the ingredients on hand and it seemed quick to put together. I thought it would taste just "all right". I was wrong! This is very tasty and delicious! My hubby liked it a lot too. It was a little mushy though as zucchini can get but I wasn't watching the time very closely so I may have cooked it a little too long.

Thai Pineapple Chicken Curry

I made this following the tip from The Screaming Chef by heating the red curry paste in oil, then adding the chicken, followed by the coconut milk. I also only used 1 T. of red curry powder, and it was plenty hot for us. This is an excellent tip. The dish was very flavorful and quick to make. However, the fish sauce I used had a very strong smell that was objectionable to me while eating. It was very off-putting. I'd smell the smell, then I'd take a bite thinking how good the dish is, but how bad it smelled. I made it again using a different brand of fish sauce which was a little better but still not good, yet I'm thinking the fish sauce lends to the good flavor of the dish so I didn't want to leave it out. If you have a good quality fish sauce, go for it!

This is delicious, especially if you add more of the sauce onto your chicken after you cut it up on your plate. If you can't grill outside, this is the next best thing for BBQ.

Cowboy Stew II

I didn't think I'd like this but it was very good. A typical scout camp meal. In keeping with tradition, I added a little ketchup on the side! Very fast, easy and good. Not fancy, and also a good traveling meal as you don't need to use any fresh ingredients.

Chicken Pot Pie II

Instead of pie crust I topped this recipe with Fluffy Biscuits by Nancy Horsburg from this site. It was incredible! It is my favorite chicken pot pie recipe. I even took it to my friend recuperating from surgery. I made everything as directed except the pie crust.

Herb Vegetable Orzo Salad

When making this salad, I forgot to add the corn. I prepared the rest as directed. This salad is fabulous! I couldn't keep out of it while preparing the rest of the meal! Then I remembered the corn and stirred it in. With the corn it was good, but without it was much better! So from now on I think I'll leave out the corn.

Quinoa Vegetable Salad

I made this exactly as stated and even though I liked everything in it, there was something that didnt' "taste right". I decided it was the cilantro. Also I felt there was too much salt in the recipe. I would decrease the salt in the quinoa cooking by 1 tsp. With these changes, I think it would be 5 stars, but of course you would have to taste it in your own mouth! I did like it and plan to make it again. I served it to company and they didn't care for it, but I think it was the too much salt and cilantro that put them off. This is the first time I ever tried quinoa and while I find it pricey, I plan to try other recipes using it.

Stuffed Peppers My Way

I have made these twice using red peppers, and found it very delicious! I used cooked brown rice the second time and added some chopped olives (any kind). Used a better quality feta cheese the second time and it made a big difference in the taste and texture. You can add anything else you like to this dish (bits of chopped broccoli, small dices of meat/chicken/seafood, etc. and it will always be delicious. Makes a nice lunch all by themselves!

Whoopie Pies VIII

I never ate a whoopie pie in my whole life and I am 59, can you believe it! I decided to try them to see what I have been missing. I measured out 1 tablespoon plus one teaspoon of batter for each pie half and this made a very nice size, about 2 1/2 inches in diameter. I baked them for 8 minutes exactly on the middle rack in my oven and they were perfect. These were very good but I was hoping for a little more chocolate flavor. I haven't let them sit until tomorrow in the refrigerator yet though. I made scratch cream cheese frosting for the filling and that is delicious in them. I was generous with the filling putting in 2 tablespoons of filling for each completed pie. All in all, I'm glad I made them and I am enjoying them very much. I am sharing them with some friends tomorrow.

Cake Balls

I made these to give as part of cookie plates to friends over the holidays. I have to say I really didn't care for them and neither did those I gifted them to. They tasted all right, but just not as good as we had hoped and not enough to want to make them again. I made strawberry cake with cream cheese frosting dipped in milk chocolate, with some dipped in semi-sweet chocolate. They looked pretty but the consistency in your mouth is not what you expect. That and the flavor makes us not care for them.
