Creamy Hot Cocoa

I am reviewing this as I enjoy a cup with a toasted bagel with butter and cinnamon sugar. It is everything I want in a cup of hot cocoa. I used skim milk because it is the only kind I have, and after it warmed a little in the pan, I added a 5 oz. can of evaporated milk and heated it until done. I did not use the half & half as I didn't have it. I also reduced the sugar to 1/2 cup and used 1 tsp. of vanilla. Marvelous!

Magic Peanut Butter Middles

Cranberry Sauce

I enjoyed this very much. I made it as written and cooked it about 5 minutes longer to make sure it would be thickened. It turned out great, and the orange flavor did not overpower but was a nice compliment. I will make again. Tasted great with the turkey, but also very nice with pork.

Down Home Casserole

I brought this dish to my daughter's for me to eat for lunch because her household (except her husband) is on a special diet. Her mother in law and husband were there so I offered them some. They loved it and so did I. Definitely not a low calorie dish with the bacon fat, but I think it is actually very healthy with all the veggies. I added the potatoes and onions to the skillet after the bacon was cooked and cooked them for about 10 minutes until they were just barely done before adding the rest of the veggies. I did wind up adding about one third cup of water to help the broccoli and carrots along. Other than that I followed the recipe as written. What a great meal! It is not fancy, just good food served right! I am making it for dinner tonight after a busy day to serve to my husband for the first time.

Pork Chalupas

This dish is a great slow cooker meal as it is quick to assemble and has a lot of flavor. Having said that, I was eating a chalupa thinking it was good, but I have other recipes for pork I like better when my husband said "This is really good". So, I'm keeping it! It did make a lot, so I made half a recipe, and I froze 3 quart bags of it for future meals. I'm always looking for more ways to serve pork. I couldn't find a 4 pound pork shoulder so I used a 2 pound pork loin roast. I do know it would have been much more flavorful with a pork shoulder though.

Simple Taco Soup

I like the simplicity of preparation, but felt it wasn't made better with the addition of the Ranch dressing mix. I have other taco soup recipes that I like better.

Kielbasa with Pasta

I too, tried this dish when my husband was dining elsewhere for the evening. I like kielbasa and he doesn't care for it. I used bow tie pasta and red sweet pepper omitting the green pepper. It tasted great! I thought this was a very imaginative invention with putting the butter and cheese on the pasta first, then adding the meat mixture to serve it. It tasted way better than I thought it would. Hubby tried a little when he came home and thought it was ok once but didn't want it in the rotation. That's ok. More for me, and it goes into my file for meals when he is away! Thanks Ann Dee!

Coconut Tilapia with Apricot Dipping Sauce

This is great! It is important not to let the coconut coating cook too long. A few of mine did and got slightly burnt but even so, they tasted good. The non-burnt ones were fabulous. A real treat, and a great way to eat more fish.

Creamy Coconut Cake

This is a delicious cake, but I don't think it was as fantastic as other reviewers found it. Cool, moist and flavorful. We enjoyed it, and I will make it again but there are other cake recipes I like better.

Easy Lovely Lemon Chicken

We did not care for this chicken. I gave it three stars because it was easy, the chicken came out tender and juicy, but the flavor was not to our taste. It may just be personal preference. It seemed lacking in something, but I can't think of what. I did discover that I like curry though. I will not make again.

Slow Cooker Pot Roast

This was awesome! Best pot roast I have made so far. I forgot to buy beef gravy mix, so I substituted 3 tablespoons of cornstarch with 1 tablespoon of beef base and all the rest of the recipes I made as stated. The gravy came out thick but not gloppy, but I think 2 Tablespoons of cornstarch would have worked better. The meal was very flavorful and the meat tender. Hubby likes potatoes, so I microwaved some medium to small size whole potatoes with the skin on for 5 minutes on high, cut them into quarters and threw them in the crock pot for about 20 minutes before serving. The gravy coated them nicely. Everything was delicious!

Salsafied Chicken and Rice

I made this dish exactly as stated not expecting it to be all that great, but it was good enough for a weekday meal and for lunch the next day. It tasted fine, and could be made special by adding other ingredients as some other reviewers did. One thing I liked about it was that you could make it with items you have on your shelf and without fresh ingredients as it is nice to have a few meals like this in your recipe file.

Aussie Chicken

This is sensational! It tastes wonderful and looks great on the plate. It wasn't hard to make at all. I made half the recipe as it was just the 2 of us. I didn't have dried onion flakes so I used one-half teaspoon of onion powder. Other than that I followed the recipe exactly. Hubby loved it and so did I. It would be great as a meal for company.

Asian Orange Chicken

This was good but the grated orange peel made the sauce a little bitter even though I was careful not to get any pith in it. I felt it also needed salt. We did enjoy it but I have other recipes I like better. It was basically just sweet. The red pepper flakes were nice but it needed something else, I don't know what.

Indonesian Pork Tenderloin

This was very good. I made an apricot sauce to pour over it, but it is good without it too. The meat came out very tender. I served it to company and they enjoyed it. I broiled it and saved the au jus to serve along side as well.

Old Settlers' Baked Beans

These beans are wonderful. They were a little too sweet, so reducing the sugar is possible without compromising taste. I didn't have bacon so I reluctantly used a handful of imitation bacon bits, and it came out very good. I think using real bacon would have been much better, and will do so next time. I used them as a side dish, but I think in a pinch it could serve as a main course.

Sweet and Spicy Stir Fry with Chicken and Broccoli

I took a few hints from reviewers and doubled the amount of sauce ingredients, plus I added about 1 tablespoon of brown sugar to balance out the heat. Instead of broccoli, I used snow peas which added another level of sweetness to the sweet/heat balance. I also added sliced scallions, fresh mushrooms, red bell pepper, and a rib of sliced fresh celery. Served it over brown rice. Hubby went back for seconds. This is a keeper. It is delicious.

Aunt Rita's Italian Stew

This is a very delicious dish. I used sweet Italian poultry sausage and did include the carrots and mushrooms. I also added some salt and pepper. It is different enough from my other Italian dishes to be a nice change. Hubby and I really enjoyed it! It is very healthy and a good way to get in the veggies!
