Unstuffed Cabbage Roll

Reviewed: Jul. 31, 2014
When I made this dish, my son and daughter-in-law were over with their little ones. They didn't stay for dinner but they did taste it and asked for the recipe! I used only 1 lb. of ground beef, a can of tomato soup instead of tomato sauce, a 15-oz. can of petite diced tomatoes, and a 15-oz. can of stewed tomatoes. I added one beef bouillon cube, about 1 tsp. Worcestershire sauce, and salt and pepper to taste. I also added 1 1/2 cups brown rice and 3 cups more water. I cooked it on the stove top in a large dutch oven for an hour stirring frequently. The rice took a long time to cook. Other than that I followed the recipe exactly. The Worcestershire sauce is probably unnecessary. I feel if I followed the recipe exactly it would have been just as delicious. A great tasting, easy to prepare meal!

Luscious Slush Punch

Took this to a farewell for a friend who was moving. It was a great success and one friend even said it was the best punch she ever had! This is a keeper.

Chungles Pasta

Reviewed: Mar. 28, 2014
We enjoyed this very much. I didn't think there would be enough moisture in the dish but there was. The smoked mozzarella was delicious but very pricey and regular would work in this dish too. It is a nice change from the usual pasta and I will be making this again.

Ultimate Double Chocolate Cookies

Reviewed: Feb. 28, 2014
This is a rich, very delicious cookie. I used one pound of semisweet chocolate morsels, and I omitted the the coffee because we do not use coffee in our house Because I used salted butter I used 1/2 teaspoon of salt as suggested by another reviewer. Hubby kept stealing them off the baking sheet while they were "setting". I used a measuring tablespoon to portion out the dough and the cookies came out looking the same size and baked perfect. They were a little crunchy on the outside and chewy on the inside. Very yummy. I got 5 dozen cookies. This will become a family favorite!

Cheddar-Topped Veggie Beef Skillet Dinner

Reviewed: Aug. 27, 2013
This meal was very good! I would recommend adding a little salt to the water for the barley. I was tempted to add more zucchini than the recipe called for but I felt for the first time I should make the recipe exactly as directed. The amount of zucchini was just perfect so I'm glad I didn't add more. Like another reviewer said, the cheese is good but you don't really need it. Beause I have a cholesterol problem, I put a little cheese on part of my meal, then left it off the rest of it. As good as it was I felt it was missing a little something but ketchup took care of that! I will make this again.

Okra Rice

Reviewed: Jul. 29, 2013
I thought this dish was good but hubby didn't like it. I do have other rice sides that I like better, but this was good. Mine came out a little slimy but not in a bad way. I think you have to be in the mood to eat something like this.

Chow Mein with Chicken and Vegetables

Reviewed: Jul. 29, 2013
To all those who say this meal doesn't have very much flavor, I want to remind you that chow mien is a mild dish with subtle flavors. It is not a heavily spiced or spicy dish. I prepared this dish exactly as written being very careful with accuracy in measuring. I followed the preparation as written. The chicken was very flavorful and moist. I did salt it slightly after browning it in the pan. The veggies added the right amount of crunch and sweetness. The flavor was subtle but I thought it was very flavorful. I cooked the noodles 5 minutes, and after assembling all the ingredients together, I brought the broth to a boil, then turned off the burner and let the noodle mixture sit for about 5 minutes. This let them absorb most of the liquid, which made them just the right consistency and the sauce thicker. This is the best chow mein recipe I have ever tasted. Thanks

Swirled Peanut Butter Cup Brownies

Reviewed: Jul. 6, 2013
I made these exactly as the recipe stated and they came out perfect. I baked them for 33 minutes. I made them for my son-in-law when his family was visiting for the 4th of July. They got eaten so fast he barely got one! So I made another pan the next day so he could enjoy. If you are a chocolate peanut butter lover this is the recipe for you!

Stir-Fried Chicken With Pineapple and Peppers

Reviewed: May 17, 2013
I like this dish very much but hubby felt it tasted a little sour (his words) so I think next time I'll add about a teaspoon of brown sugar to the soy mixture to level things out. I am thinking the pineapple juice might not have been very sweet. I also added mushrooms and snow peas to the dish because I had them and needed to use them up. I recommend this dish.

Sweet and Sour Pork III

Reviewed: Apr. 21, 2013
This recipe is very delicious. I made it as stated. Next time I think I will take one reviewers suggestion to cook pork in a wok instead of deep frying to see if it is easier and less time consuming. Still, it is worth the effort to make this wonderful dish!

The Cheese Thing

Reviewed: Mar. 16, 2013
I tried this dish because it was easy and I was surprised how good it was! Hubby didn't care for it but it is a good weekday meal and one I feel the grandchildren would love. Definitely try it. The leftovers are good too.

Espinacas con Garbanzos (Spinach with Garbanzo Beans)

Reviewed: Mar. 13, 2013
I made this with fresh spinach. I sautéed the onions and garlic, then added the garbanzo beans plus a little water and smashed part of them. Then I added the spinach, salt, and cumin and cooked until the spinach was wilted. It was very flavorful and delicious! I wasn't so sure about cumin and spinach together, but the cumin did not overpower (I actually used a little less than a half teaspoon). Hubby ate all of his but did not comment. Not my most favorite veggie, but I plan to make it every once in awhile.

Peanut Ice Cream Pie

Served this at a summer family cookout. I topped it with a few peanuts and drizzled it with fudge sauce and whipped topping. The family gobbled it up! This isa great way to end a cookout.

Classic Caramel Corn

Reviewed: Mar. 8, 2013
Fabulous! I made 2 batches because we couldn't stop eating it. The first time I made it as stated but felt the caramel should have covered the popcorn more. So I made extra caramel for the second batch which covered it completely, but it did not taste better! Next time I will decrease the popcorn to maybe 3 or 3 1/2 quarts instead of 4. Still, this is THE recipe, and better than any others on this site that I have tried.

Pork Fried Quinoa

Reviewed: Mar. 8, 2013
I enjoyed this dish very much, but my husband didn't like it. It was our first time trying quinoa in a main dish and that was the part he didn't like. I found it very flavorful, easy to fix, and healthful. I'll just have to make it for me to eat for lunches.

Chicken Chimichangas

Reviewed: Feb. 17, 2013
This recipe is great. To speed things up I mixed all the filling ingredients, except the refried beans, together and that made it easier to fill the tortillas. The refried beans I smeared on the tortilla before adding the rest of the filling. I thought the filling tasted bland at first, but after putting the whole meal together it was perfect. I did make the guacamole and served a generous dollop of it on a bed of shredded lettuce with a dollop of sour cream and a dollop of salsa next to it. Like other reviewers, I rubbed olive oil on the chimichangas and baked them in the oven at 375 degrees until they were hot and golden. Then I placed them on the bed of lettuce. Any extra enchilada sauce got poured on them before baking. This recipe is a keeper!

Chocolate Covered Cherry Cookies II

Reviewed: Feb. 16, 2013
These are rich and delicious. I made them for my husband for Valentine's day and he loved them! I measured out 1 1/2 tablespoons of dough for each cookie and covered each with 1 1/2 - 2 tsp. of the chocolate sauce and swirled it around to completely cover the cherry. An impressive fancy cookie. I got about 27 cookies.

Laura's Quick Slow Cooker Turkey Chili

Reviewed: Feb. 16, 2013
When my husband discovered we were having this for dinner he complained because he is a big fan of my typical ground beef chili. After eating, he "guessed it was ok" as he went back for seconds, and polished off the remainder the next day! I kept with all the spices and used Ro-tel tomatoes instead of tomato soup after reading other reviews, and I felt this was too much spice. Next time, I think I will keep true to the recipe as it is probably fine the way it is stated.
