Cheesy Broccoli Chicken Casserole

This is a kid pleasing recipe and the taste is very good! The reason for the 3 stars is because of all the changes I will make when I fix this again. 1 bag of rice will be plenty. I also used frozen broccoli (I had it on hand). I don't like my veggies very mushy, so the broccoli was frozen when I put this in the oven...that was just right! Since next time I will be cutting the rice in half, it might be a good idea to reduce the mayo by 1/2 too. I did not add the curry powder because my family doesn't really care for it and the taste was still very good! I would also reduce the browning time for the chicken to 6-8 minutes on each side, then bake everything for 30. I also did not cut up the chicken. My hubby is watching his carbs, so I left the chicken whole so he wouldn't have to eat a lot of rice to get chicken.

Breakfast Supreme

I am always looking for an egg casserole without bread or potatoes in it. I love this one. I think the hamburger balances out the sausage. When I took it out of the oven, it did have quite a bit of grease, so I just drained it...not a big deal. I am making it again for my mom's group and going to try sausage and crumbled bacon. I am sure it will be just as good!!

Bierox Casserole

New Family Favorite!! The only change I did to the recipe is put 2lbs of hamburger instead of 1lbs. Only because that is how our beef is packaged. The ratio of hamburger and cabbage seemed just right to me. Great, easy recipe!! Will make again!!!

French Fry Casserole

My family teases me when I try a new recipe because I always ask if its a keeper or not. Well this one is a keeper!! The only thing different I did was use 2 lbs of hamburger only because that is how our beef is packaged. Everything else I left the same. I always love finding good casseroles!!

Easy Mini Quiches

Not really "mini quiches" but rather biscuits. I followed the recipe exactly, but used sausage (finely crumbled) instead of bacon because that is what I had. Made one recipe and it made 1 1/2 mini muffin sheets, not 2. Will double next time. 8 minutes in the mini muffin pan was perfect. Taste was very good, had compliments!! Will make again.

Easy Layer Bar Cookies

One pan cooking, super easy, super good. I did, however, only use 1 cup of coconut. If you do not like coconut, not to worry...taste of coconut does not come through only texture. Otherwise, so good and simple.

Will make this again. Like this recipe better as cupcakes with cream cheese frosting, but either way is very good!! Very easy to make. One recipe makes 7 mini loaves.

Apple-Cran-Cherry Oatmeal Cookies

Good, moist, easy to make. I did only put dried cranberries in...left out the dried cherries, but put in white chips instead. Took them to my mom's group for the kids' snack and they loved them!!

Pecan Sandies

Super easy recipe. I used a small ice cream scoop and got 113 cookies out of one recipe. I did bake them at 350 for 10 minutes and they came out perfect. Taste is very goo!!

Hot Cocoa Mix

I gave this as Christmas gifts to friends and neighbors this year. My kids and I thought it was great. I am not a huge chocolate fan, but the balance is good. Not too chocolatey. I only made a double recipe and could have easily made a triple or quadruple. I paired this with spoons that had hardened white almond bark with red and green sprinkles and marshmallows, to use to stir the hot chocolate. Looked and tasted great too!!

Janet's Rich Banana Bread

I have been trying for many years to find a banana bread recipe that is moist and good without using buttermilk. With sour cream (which I always have on hand) in this recipe...it is just as good or better than one with buttermilk. I doubled the recipe. It made one big loaf and 5 mini loaves. So yummy!!!!
