Where did March go?

I promised myself at least one blog a month and already I have failed. I don't know what happened in March besides unusual 80 degree weather here in Wisconsin. so maybe that was it! I was away from my computer screen and even (GASP) out of the kitchen!
stealing away some sunshine while I had the chance. I did however continue to cook up new recipes and classes for The Petite Chef. All in all I think March was successful (minus the missed blog) My son had his 9th birthday which to his delight is on St. Patricks
day. He does not relish the fact that the traditional meal of that day is corned beef,cabbage and soda bread. So to please him, I always whip up a big pot of potato and corn chowder. Irish? I'm not so sure, but it is delicious and feeds many which is important
in this houshold of 7! I adapted this recipe from the one my mom used to make when I was growing up. her version is for clam chowder, I just omit the clams and add corn.
1 lb bacon diced
1 med onion diced
10-14 russet potatoes peeled and diced large
6 cups chicken stock
1 16-18 oz bag frozen sweet corn kernels
2-3 cups half and half
salt and pepper to taste
1 bay leaf
1/2 teaspoon thyme(optional)
fry bacon and onion in stock pot untill crisp(drain grease) add potatoes and chicken stock and spices, simmer for 15-20 min untill potatoes are tender. use potato masher to mash up some of the potatoes to act as thickener. add corn and simmer another 5-10 uncovered.
remove from heat and stir in half and half. may serve with shredded cheddar cheese and chopped green onions if you like!
