Banana Chip Muffins I

Reviewed: Mar. 20, 2011
I made these muffins for breakfast this morning, and they were great! I think this is a great recipe with tons of potential for tweaking. I made the following changes: I added 1 tsp each of vanilla and cinnamon, used 3 overripe bananas, substituted applesauce for the oil, and added an extra 1/8 C of milk (because the batter was very thick and dry). At exactly 20 minutes in the oven these were awesome! I will be making these again...soon!

Coffee Butter Frosting

Reviewed: Mar. 20, 2011
Delicious! I swear I could eat the whole batch of frosting right out of bowl! It took all of my self control, but I did manage to use the frosting to top my cake (Chocolate Mocha Cake I). Perfection!

Strawberry Cake from Scratch

Reviewed: May 17, 2011
I made this cake and found that it tasted wonderful, but I had textural problems, although I followed the recipe carefully (including sifting the flour). My cake came out very dense, but very moist, with an almost chewy texture to it. It wasn't necessarily bad, but different, and certainly not what I hoped for. I will try again, as I have to assume something I did, or didn't do, caused the cake to have that texture, but I can't imagine what I did wrong.

Aunt Hazel's Apple Oatmeal Cookies

Reviewed: Dec. 19, 2010
These are the best oatmeal cookies ever! I added 1/4 tsp allspice and, instead of using the glaze, added butterscotch chips. These have quickly become a family favorite, thanks for submitting!

Sweet, Sticky and Spicy Chicken

Reviewed: Nov. 22, 2013
This became a favorite the first time I made it. My suggestions are to increase the amount of sauce ingredients, because once it thickens it becomes a glaze. So if you want an actual sauce that can be drizzled, the sauce recipe must be doubled. Like other reviewers, I opt to add ground ginger. Also, I like to add 1/3 C cornstarch and the chicken to a ziplock and shake to coat.

Mint Chocolate Cake

I couldn't say enough good things about this cake! I did need to add more mint extract like some other reviewers, but other than that it was perfect!

Garlic Herb Skillet Potatoes

Reviewed: Aug. 12, 2010
I was looking for a really great potatoe recipe and decided to try this one. These potatoes were okay, but this receipe is not *the one*. They were pretty tasty but somehow they tasted like a million other potatoes dishes I have eaten before. Just not very unique.

This chicken was tasty but next time I will add more spice, as I found it a little bland.

Apple Crisp II

Reviewed: Mar. 20, 2011
I thought this recipe was okay, but not great. My main complaint was that the crust was not as flavorful and sweet as I had hoped and it didn't crisp, even after an hour in the oven. It was really just chewy and bland. The apple mixture was quite tasty, though and altogether it was acceptable served with vanilla ice cream.

The Best Rolled Sugar Cookies

Reviewed: Dec. 19, 2010
I was excited to try this recipe after reading all the wonderful reviews. I have made tons of different types of drop cookies but never got around to baking cut out sugar cookies. I finally made some (a different recipe) a couple of weeks ago and it was a huge pain! I was very surprised and assumed it was the recipe. Well I am halfway through my batch of dough from this recipe (I halved the recipe) and I must say I am struggling with this recipe even more! Not only am I having a hard time working with the dough (I chilled it for 6 hours), but it is sticking to my non-stick cookie sheets, wrinkling and cracking on the top and it is a very DRY cookie, although still soft. I am 99% sure these problems are completely my fault, but I have no idea what I have done wrong. At this point however, I am thinking I will go back to the previous recipe next time I make sugar cookies. It didn't have as nice a flavor, but at least those cookies were not so dry, didn't stick to my sheets, and looked nicer coming out of the oven. I'm going to go finish baking the rest of my cookies and this time use Pam on the cookie sheets.

Low-Fat Blueberry Bran Muffins

Reviewed: Sep. 19, 2010
I thought these muffins were very yummy! I did not add a full cup of blueberries, maybe 3/4 of a cup. I folded them in just until there seemed to be a good ratio. I think if I had added the full cup then there would have been too many blueberries. I received good feedback from the people who ate them but some also complained that they smelled like "birdseed". I guess that's what happens when you bake healthy food for teenagers... :-)

No Bake Cookies III

Perfect no bake cookie! I use regular rolled oats and boil for 5-6 minutes. The cookies always turn out excellent with just the right texture and delicious flavor.
