Christmas Sandwich Cremes

These are always a family favorite at Christmas. I used the cap off a bottle of vitamins for the larger cookies and a cap off a bottle of water for the mini-version. We call these "hamburgers". Used a ziplock bag with corner cut to squeeze the filling in.

Oven Roasted Red Potatoes

these were great! They also were great as leftovers both cold and warmed up. I marinated them overnight in olive oil and soup mix. Baked on cookie sheet at 450 the entire time. They did not crisp but tasted great!

Chocolate Truffle Cookies

These turned out really good. I used 1 tsp of vanilla and 1/2 tsp of mint flavor. I used 2 squares of funsweetened chocolate and 2 squares of semi-sweet since that's what I had on hand. I used mini chocolate chips. I put cookie sheets in the freezer and coated my hands with powdered sugar and had no trouble rolling into balls. Was messy but cookies set up nice! I made them small (rolled 2 cookies from 1 tablespoon scoop of dough).

Ham and Noodle Casserole

This was excellent! I didn't have sour cream so used a little bit of heavy whipping cream. After draining the noodles I used the empty pot to saute onions in butter. Then just added all the ingredients to the pot to mix and then poured into the casserole dish. I used fresh bread crumbs on top....Delicious!!

Marinated Grilled Shrimp

This turned out really good. I set aside some sauce and added cornstarch and cooked shrimp in a skillet on the stove with the sauce. Served over rice. Really yummy.

Best Ever Popcorn Balls

Brown Sugar Meatloaf

The meatloaf seemed a little mushy...I'll try it again. I used bread crumbs instead of saltines and put the brownsugar/ketchup on the bottom and top of the loaf.

Easy Chicken Tetrazzini

This was awesome!!! Really had great flavor and my whole family absolutely loved it!! I used cream of mushroom instead and added onion salt and garlic powder to the sauce and garlic salt on top of the noodles and chicken before pouring on the sauce.

Old Fashioned Coconut Cream Pie

AMAZING!!! We did follow suggestions and made changes however it almost was a running flop but we poured the soupy mixture into a pot on the stove and within a couple minutes it was thick and perfect. The microwave suggestion did not work for me. I would suggest following the recipe and cooking on stove. I used 2 cups of coconut milk and 1 cup of half and half. Coconut extract instead of vanilla, 1/3 c cornstarch instead of flour and only toasted coconut on top the cocounut inside pie was not toasted. I made homemade whipped cream with coconut extract instead of vanilla. sooooo good.
