Curry-Coconut Shrimp

Reviewed: Oct. 19, 2009
This was good with the following changes: I added one whole cup of coconut milk, doubled the curry, added 1/2 tsp of ground ginger (will add fresh ginger next time) 1/4 tsp cayenne pepper, 1/4 tsp cumin seeds and topped with green onion, chives and a sprinkle of paprika. Had a good mild spice to it. I will make again and NOT use the corn starch and water mixture - made it too thick.

Reunion Meatballs

Reviewed: Oct. 14, 2009
I added 1/2 tsp red pepper flakes, 1/2 TSP yellow mustard to the meat mixture. Also cut the ketchup to 1/2 cup and BBQ sauce 1/2 cup (I will probably only use BBQ sause or only brown sugar next time -the sauce was too sweet for me.

Darra's Famous Tuna Waldorf Salad Sandwich Filling

Reviewed: Oct. 14, 2009
this was good - due to what I had on hand, I made the following changes, used pecans instead of walnuts, a different type of apple and miracle whip instead of mayo. I will make it with the stated ingredients next time and I bet it will be even better.

Smoky Chicken Spread

Reviewed: Oct. 13, 2009
this was a good spread for crackers - my wife ate it with celery and loved it. I did not have smoked almonds so I added a few dashes of liquid smoke as other reviewers suggested.

Slow-Cooker Chicken Tortilla Soup

Reviewed: Oct. 13, 2009
this was really good - I made as directed but used all chicken stock-no water, added a can of black beans and topped it with cheddar cheese and avocado - sour cream . Very good!

Marinated Spicy Pork Chops

Reviewed: Oct. 11, 2009
I did make some changes based on other reviews, but this turned out fantastic on the grill. I used both chili sauce and chili powder, cut the soy sauce to 1/8th of a cup, used worchestershire sauce also and marinated them for almost two days. The crispy fat from the grill was FULL of flavor. I usually cut of the fat but it was so yummy. Next time I will probably add a bit of cayenne pepper and paprika to kick the spice up. I may also use a spicier form of chili sauce. Thanks for the recipe to build on!

Dijon Chicken Salad

Reviewed: Oct. 9, 2009
I followed the recipe with the following changes (the only thing I omitted was the red grapes b/c I did not have any): added garlic powder, added more chives, added 3 green onions, added sliced almonds, and added chopped pecans. turned out really good! I've been looking for another great chicken salad recipe - thanks for sharing!

Creamy Jalapeno

Reviewed: Oct. 8, 2009
I did not have any sour cream or dry ranch but I did the following changes and it came out great: added 1 and 1/2 tablespoons of ranch salad dressing, garlic powder, 1/2 tablespoon canola oil, 2 tablespoons yogurt, increased the number of jalapenos (I used 6 small ones from my garden but I love very spicy food) and used about 8 pickled jalapeno slices. I'm giving this 5 stars because ever since having creamy jalapeno dressing at Chuy's in Texas, my wife and I have been in love with it. And I have been trying to re-create it.

Chicken Piccata II

Reviewed: Oct. 4, 2009
This came out pretty good. I let the flour mixture sit on the chicken in the refrigerator for half an hour before cooking and it worked well. For the sauce, I used cream of chicken soup, fresh lemon jiuce, lemon rind, salt, pepper and garlic powder. Came out nice.

Salmon Patties I

Reviewed: Oct. 3, 2009
This is very similar to an old favorite that my mom made quite a bit. The only thing I would add to this is throw in a bunch of dried dill to the salmon (dried dill and salmon is a fabulous mix) and also pour on a can on cream of mushroom soup !

Slow Cooker Beef Stroganoff I

Reviewed: Oct. 3, 2009
this came out decent - I maded the following changes: TWO cans of golden mushroom soup, added salt, pepper, garlic powder, minced pickled garlic, and used beef broth instead of water. Then added fresh mushrooms half an hour before done and sour cream before serving. Even with all of this, I would marinate the meat overnight to make it more tender. Probably use Lawry's Pepper and Onion Steak Marinade and my wife suggests chopped parsley on top before serving and maybe adding some red wine while slow cooking.

Breaded, Fried, Softly Spiced Tofu

my wife loved this recipe - I thought it was decent - but I'm not a huge fan of tofu. So I am rating it based on my wife's reaction (who is an excellent cook)

Flat Iron Steak with Three Pepper Rub

Reviewed: Oct. 3, 2009
I found this recipe when my wife was told to eat a low sodium diet and we were both craving fajitas. Pre-packaged fajitas are loaded with salt so I tried this twice so far - once with flank steak and once with porterhouse steaks pounded/flattened - they both came out great! I let the spices sit on the flank steak overnight and I think it was a bit too long. A few hours seems to be just fine - which is what I did with the porterhouse. This is what I will be using to make fajitas from now on. I made it for a house full of people and they all loved it.

This was a surprisingly yummy soup. The only thing I changed is I used some home made vegetable stock instead of the chicken stock. Yum!
