Gorgonzola and Wild Mushroom Risotto

Fantastic flavor--the gorgonzola (I used blue cheese since I had it around) adds a subtle delicacy to it. Very fancy tasting. Any sorts of mushrooms could work with it. I used locally grown oyster, crimini and shiitakes, fresh. Added a bit of fresh rosemary with the cheese and skipped the cream. Would probably use the cream in colder months, but in summer it seems too heavy. Definitely making this again!

Candied Sweet Potatoes

Sweet and simple. Makes a lot of sauce--I used the amount called for in the recipe for twice as many sweet potatoes, plus a butternut squash. I roasted them, then added the sauce for the last 15 minutes of cooking... They were delicious!

Roast Turkey With Tasty Chestnut Stuffing

This was a hit last night for Thanksgiving! I'd never cooked with chestnuts before (half of the bag I bought had spoiled unfortunately, so the stuffing wasn't all that chestnutty); they were a seriously yummy addition to stuffing but time consuming to prepare. I added apples and used fresh herbs instead of dried, which I think is crucial to the flavor and appearance. I baked the leftover stuffing that didn't make it into the turkey, and it was a bit buttery--next time I might cut down on the butter and substitute some broth. We had an extra two guests for dinner last night and now there is just not enough leftovers! I might make another batch of this stuffing--it's seriously good.

Vegetarian Nut Loaf

wanting to keep it simple, i looked all over my neighborhood for a nut loaf mix to no avail so I tried this recipe. It was a big hit for the veggie crowd. I even forgot the eggs and it was still very good. This is one of those recipes that you can really mess around with for different variations. I used fresh parsley, thyme and sage instead of basil and oregano (I did add some italian seasoning too). Since sunflower seeds are somehow unheard of I used cashews instead to delicious ends. Added some flax seeds. Wonderful! Thanks for posting will definitely make again.

Orzo and Rice

My husband is a cyclist, and I need to come up with carb and protein-heavy meals for the night before he races.. He thinks chicken and rice is the best combo, but I'd been getting bored of plain old rice. Last night I made roasted chicken, sauteed asparagus, and this orzo and rice--topped it with a little grated parmesan and a dash of balsamic vinegar--amazing! I used 2 cups of my own chicken stock rather than the bouillon.

Burmese Chicken-Coconut Soup (Ohn No Kyawswe)

This is a really delicious soup, I'm only taking off one star because I found the sauteed chicken in it to be a bit unappealing. i'm making it again tonight, but using some leftover roasted chicken in it, and I think that will be much tastier. I couldn't find chickpea flour, so I used regular all-purpose flour instead and that seemed to work okay. This soup has lots of opportunities for modifications, adding different vegetables, tofu, etc. Very yummy, versatile, and really hits the spot, and all that ginger is quite soothing especially if you have a cold.

Chicken and Dumplings II

I give this 3 out of 5 stars because the instructions are lacking for someone trying for the first time to make dumplings! Maybe someone who's done it before would know how long to cook them! The recipe doesn't specify.... I used the canned biscuit mix like another reader suggested and perhaps that was my mistake, but after letting them cook for about 5-7 minutes, we pulled them out and they were uncooked in the middle. Just doughy and gross. We threw everything back in and cooked it longer and then when we served it the dumplings had all but disappeared in the broth!! It was so disappointing. I really would like to try this recipe again some time, not using canned biscuit dough--Please let me know what to do after I add the dough!!!
