Red Velvet Cake

I didn't use the cake recipe, only the icing. Excellent! Didn't change a thing and would not change a thing. However, even having read the most useful comment, I still managed to under beat the sugar and butter. I didn't check before I added in the milk mixture and only realized as I started icing the cake that the sugar particles were still not dissolved. No problem, put the icing back in the stand mixer and beat it for an additional 5 minutes. It became even fluffier than before. First time making this type of frosting but will definitely make this again.

Fresh Pear Cake

Excellent cake. Had plenty of fresh pears from my neighbor :). I used about 1/2 cup less of sugar and I'm glad I did. Still plenty sweet. Will definitely make this again. Spices are right on the mark.PERFECT!

Coffee Butter Frosting

Great taste. Lovely texture, spreads beautifully. Just not enough icing for a double layer cake. Need to double the recipe. Used this recipe to go with the chocolate mocha cake from this site. Made coffee stronger than what was written in both recipes and I'd say that the combination is just right! Will be making this recipe again!

Prosciutto-Wrapped Chicken Breasts with Herbed Goat Cheese

Used equal amount of fig goat cheese and fine herbs goat cheese, mixed in about 2 tablespoons of roasted red pepper pesto + about 1 tablespoon of regular pesto. 2 slices of prosciutto per breast. The flavor of the fig goat cheese was very prominent. Interesting mix! Would perhaps brown the wrapped breasts prior to putting them in the oven next time, just to put some color on them. Cooking time was a little too long (I removed the breasts 5 minutes ahead and they were large pieces). I would make this again.

Classic Minestrone

This is a good start to a great soup. I refer to this recipe for the right balance of vege to liquid quantity. I start by browning pancetta cubes in some oil. Then I add the mix of vergetables + some fresh garlic. Instead of thyme I add in about a tablespoon of pesto, a few drops of green pepper Tabasco (Milder Jalapeno) and a piece of Parmigiano rind. Fantastic!

Lentil Soup with Lemon

Excellent! I've tried numerous lentil soups but this is the one for me. Fresh flavors and nice texture. I may have added more carrot than what was written but still fabulous. KEEPER!

Low-Fat Blueberry Bran Muffins

Excellent recipe even though I tweaked it quite a bit. Didn't have wheat bran so substituted with wheat germ, pumpernickel flour & oats. Used 1/2 cup of brown sugar but think that the 2/3 would have been just fine. Used fieldberrry applesauce instead of just regular apple. Maybe a 1 1/4 of mixed frozen fieldberries instead of just blueberries. Overall, nice texture and moist.

Lamb Tagine

I had all the spices and marinated for a good 12 hours. I browned the meat and then transfered everthing to a crock pot. Cooked it on low for a good 7 hours and it was just perfect (made 2.5 times the recipe). Blend of spices is excellent! Served with a spiced couscous with dried apricots, prunes and some pine nuts. I will definitely make this again.

Followed the recipe minus 1 patato. Very silky, beautiful texture. Yes, I have to agree that it lacks spices but you can always add to suit your tastes. Will make this again.
