About this Cook
I paint fine art, oils and watercolor. I also paint in acrylics, tole painting, ceramics. Jewelry making. Avid reader in several genres, especially cozy mysteries, sci-fi fantasy and anything on NASA, I am an old movie buff and newer movies also. I enjoy music in many genres, mainly Contemporary Christian, Country, Celtic and soft rock and Classical. And then there is cooking! I love to grow fresh herbs to cook with and make up many of my own recipes. I am also a certified dog trainer and am learning all I can regarding cat behavior. Then there is my interest in tigers and their plight. Okay, I have more interests than I can keep up with, but its never boring.
My favorite things to cook
Southern home cooking, Italian and Mexican. Experimenting with tasty healthy recipes. I love finding new ways to cook ordinary things and make it interesting. I love using spices and experimenting with the flavors. Cooking is like my art. I love to create.
My favorite family cooking traditions
Southern. Breaded and fried. And trying to make more healthy choices that will taste as good. Old family recipes passed down from my Mother and Grandmother. They were the best and taught me well. I love using fresh vegetables. I love cooking that requires everything fresh or from scratch without a lot or shortcuts. I like recipes tin a lot of ingredients with spice, onions, peppers, etc. I want flavor.
My cooking triumphs
Almost all of my recipes turn out well that I make up. I seem to have developed a knack of blending spices. I take basic recipes and tweak them. My greatest dish as far as all my family and friends, and myself, are concerned is my spaghetti sauce. I have had some great success with my pressure cooker, especially with pork loin roast with poblano peppers.
My cooking tragedies
Where I seem to have the most problems is in Asian cooking. I haven't mastered the spices and what goes with what. That has probably been the worst.

Best Beef Enchiladas
Wow. This was a fantastic recipe that the whole family loved. No need to tweak this recipe except that I added some shredded cheese inside each enchilada. Spices were just right. Also very easy to make!

Fabulous Beef Tenderloin
Wow! I admit I had my doubts also, due to the scarcity of ingredients. With a cut of meat this doesn't need a lot of spices. The soy sauce and butter was all it needed. It put a nice light crust on the roast. Otherwise, I have never had such a fantastic tasting piece of beef in my life. Cow isn't just cow after all!! Try this recipe, it is fabulous and you won't be sorry!!!!

King Ranch Chicken Casserole
Wow. I haven't made this dish in ages. This particular recipe, and there are lots of them out there, surpasses any I've had before. It might be a little more work but it's totally worth it. The only change I made was putting a final layer of 6 deli slices of pepper jack cheese before baking. Yum!!!!
