Chicken with Garlic, Basil, and Parsley

Reviewed: Oct. 24, 2012
My husband just started a diet and I made this for him. He loved it! I didn't have fresh tomatoes on hand, but I used our garden tomatoes that I had frozen. Worked fine.

I have made many varieties of roasted potatoes and I thought this one was in there with the best. I threw in some chopped onions too and when light on the oil and salt.

Tuna Noodle Casserole from Scratch

Reviewed: Jun. 12, 2012
I change this recipe a lot so I'm sure you wonder why I gave it five stars. I mostly change it though out of laziness. I don't use the flour at all. I just use cream in place of the milk. This way I don't have to really make the sauce. Otherwise I follow others advice of adding a bouillon cube and doubling the crumb topping. My husband adores this recipe. Oh and if I don't have mushrooms or celery I just leave them out.

Chicken Enchiladas

This does not need changed at all. I've made it a couple times now and it is perfect. My husband prefers lots of cheese though so I add some to the filling.

Delicious Egg Salad for Sandwiches

Reviewed: Jun. 12, 2012
This is a great recipe that really just needs tweaked to your personal taste. I used less green onions and added one stalk of celery. We like to eat ours with tomatoes and lettuce.

Restaurant-Style Buffalo Chicken Wings

Reviewed: Feb. 18, 2012
I made these following Amydoll's baking instructions exactly. I also added some garlic powder, onion powder and season salt to the flour as someone else mentioned. These were a huge hit with my guys and we will have them again and again.

Quick and Easy Green Chile Chicken Enchilada Casserole

Reviewed: Jan. 19, 2012
I pretty much followed the directions exactly on this except I added some taco seasoning to the meat. It was ok and my husband even ate a second helping, but we have had better enchilada recipes. It wasn't soupy, but there was no crunch to it. The corn tortillas had soaked up so much sauce that they fell apart and could barely be identified.

Roasted Garlic Bread

This is the perfect recipe. As everyone said don't be afraid of all that garlic. I only had already minced so I roasted that instead.

Spaghetti Carbonara II

Reviewed: Jan. 16, 2012
This will be on our regular rotation. I ended up adding milk and peas and some additonal cheese for flavor. The adjustments I will make for next time is use less pasta and more cheese.

Corn Fritters

Reviewed: Nov. 20, 2011
I made two batches one sweet and one savory. My FIL ate more of the sweet, but I prefered the savory. For the sweet i followed others advice and used 1/4 cup sugar and served with honey. For savory i added garlic and onion powder and some dried jalopeno from our garden. VERY IMPORTANT is the temp of the oil. What is listed in the recipe did not work for me. I ended up needing a lower temp or mine overcooked in seconds. I would do one at a time until you get the temp right otherwise you could easily ruin a whole batch.
