Maple Salmon

Carrie's Garlic Pesto Tuna Salad Sandwiches

I really enjoy this recipe. Nice, simple, and nutritious. I typically just make the tuna spread without garlic and serve on top of crackers, or as a dip with carrots, cucumbers, etc.

Orange and Lentil Soup

Apple Bavarian Torte

I thought this was a pretty good cake. I didn't really like the crust though. Otherwise, I followed the suggestions of other reviewers.. I microwaved my 6 apples for 3 minutes before adding them on top of the cream cheese mixture. I accidently put the almonds on at the beginning of the baking, and they turned out great. It fed 5 people nicely. Coincidently, my mother actually made the same cake earlier in the week but used cherries instead of apples. She absolutely loved that.

Microwave Baked Apples

Use apples that will hold their shape for this recipe - Golden Delicious, Granny Smith among others. This was pretty good for being done in the microwave (quick and easy) but wasn't fabulous. I added toasted slivered almonds for a bit more substance.

Pesto Pasta with Chicken

This is a good recipe.... I made a few modifications - I used 16 dry-packed sun-dried tomatoes instead of oil-packed (soaked them in boiling water for 3-5 minutes and then coarsely chopped) and added a handful of toasted pine nuts (omitted red pepper flakes though). Very easy and tasty. I used half of a 270mL basil Classico pesto, if that helps anyone. :)

Artichoke Spinach Lasagna

I thought this was alright - a bit too salty for my liking, but my guests really enjoyed it. I made a few modifications, as suggested by others: I didn't cook my whole-wheat lasagna noodles and I added 2 layers of ricotta (15 oz ricotta + 1 egg + garlic powder). My bnoodles were perfect - it was not a soupy mess, probably because I hadn't pre-cooked my noodles (they were not no bake).

Pasta with Fresh Tomatoes and Corn

Yummy. A tasty summer dish - hot or cold. I modified the dish slightly, but it turned out well. I used more corn (2 cups) and threw in an entire 19 oz can of black beans. I also used fresh instead of dried basil (1/2 cup). Instead of parmesan, I used feta with pleasing results. I also used way less oil (only 1 tbsp). Otherwise pretty tasty.. I'd wait for the summer tomatoes for this dish. :)

Aunt Cora's World's Greatest Cookies

These are great cookies. I didn't change a thing (a yummy chocolate chip cookie with a taste of peanut butter). I was a bit nervous after I tried a few right from the oven, but they tasted so much better the next day. Great for when you have to make ahead (and this recipe makes a lot of cookies!).

Fava Bean Breakfast Spread

A wonderful dip! Easy too! As suggested, I replaced the parsley with 3 cloves of minced garlic and pureed the mixture for a smoother dip. And in case the directions aren't clear, I used the liquid from the canned faba beans. I could've sworn faba and fava beans were the same thing!

Chocolate Covered Orange Balls

I had no vanilla wafers, so I used oreo cookie crumbs instead. The dough was a bit sticky, so I added a bit more cookie crumbs which worked out nicely. I used bittersweet chocolate instead of the milk chocolate. Although they were a bit tedious to make, they were worth it. These cookies have been the season's hit.
