Chicken and Broccoli Alfredo

Reviewed: Oct. 8, 2009
My family loved this cuz I added some love!! Try this: First cook and crumble 6 strips of bacon, then drain all but a tiny bit of fat in the pan. Add the 2 T butter and saute one shallot over medium-low heat. Add 2 cups cooked dark meat chicken and warm through. Add 1/2 teaspoon dried Thyme, 1/2 teaspoon Mrs. Dash, a pinch of red pepper flakes. Do NOT salt to taste now, because you will add in Bacon, Cambell's "Cream of Chicken with Mushroom," and Parmesan, which are all salty. Use a whole cup of whole milk, or the sauce will be thick and sticky. Low fat and non fat milk make very thick alfredo sauce. If you need to use non fat milk, add in some hot water from the pasta pot at the end to thin your sauce. This sauce can be made ahead of time, and then rewarmed for a very quick dinner prep. Next time I'll try artichoke hearts instead of broccoli!
