Miracle Soup

My husband and I have been watching our caloric intake for a while, and this soup is PERFECT for us! We love the flavor, love the soup, and it's great leftover too. I'd like to add some red cabbage sometime, since this reminds me a lot of Hot and Sour soup...

Chinese Broccoli

LOVED this recipe! We are huge fans of Broccoli so this was an exciting new one to try for us. I used regular broccoli, but it was still amazing. I doubled the sauce so that I could use some for a stir fry the next day. Good idea, that also turned out great! I wouldn't change a thing...

Easy Baked Tilapia

Very delicious meal... it is necessary for a good flavor to GENEROUSLY add the Old Bay Seasoning. Also, the cooking time allowed wasn't nearly enough to actually warm the frozen vegetables all the way through or cook the fish. It took about twice the time. I also added bread crumbs during the last 10 minutes of cooking. While eating I realized that the vegetables touching the lemon were amazingly delicious and I will be adding lemon juice to the veggies next time. Also, the veggies were really bland, so I think I'll spice them up a little more than just salt and pepper. Will make again for sure!

Couscous and Cucumber Salad

Very easy, VERY good, and extremely refreshing. Served this with a savory chicken dish and it complemented the flavors wonderfully. I plan on adding different things to it for different occasions. I will add chicken to make this a main dish like another reviewer. My family loved it, and it is now in my recipe box for MUCH future use!

Maria's Stuffed Chicken Breasts

My husband LOVED this dish! It was soo easy to prepare. I had to roll my chicken as it was too small and thin of a breast to fill. Also, the amount of filling depends on the size of chicken you're using. I used half the recipe and still had too much. I just added it to the sauce, which my hubby loved too. I didn't want to cook it for an hour in the oven (as I didn't have that much time)... so I cook it on medium heat in a covered saute pan for about 20 minutes, flipping my chicken once after 10 minutes, and it was completely cook. Keep in mind that my chicken breasts were small and thin. You might need to cook yours longer on the stove if the meat is bigger. I liked that it didn't overheat my house having the oven on too. :) Supper Yummy... it's already been demanded for company next weekend.

Campbell's® 15-Minute Chicken and Rice Dinner

The base of this meal is actually very good if you take a few extra moments to spice it up a little. I read all of the reviews and decided to do just that. I cubed the chicken (to cut down on the cook time and to spread a little chicken much further). Once I placed the chicken in the pan with the oil, I then used Coriander, Basil, Garlic Salt, Paprika, and a dash or two of Pepper. (although I still added some paprika and pepper when I added the additional ingredients) Also, I didn't have instant rice, so when I added liquid I didn't use water, I used milk. I wanted to maintain a creamy consistency without the watered down flavor. Don't use the full 1 1/2 cups if you're not using instant rice as you don't have it to soak it all in. You'll have WAY too much liquid. Add milk until you reach the desired consistency. I also agree with not using the broccoli florets. I did, and they were WAY too big. I don't like needing to cut food in a one bowl meal like this... Cooking time is completely inaccurate if you're not cubing your chicken. Delicious! I plan on making it again and again!!

One Pot Pinto Beans

Great recipe and super easy, I had everything in my cupboards! The recipe calls for way too much salt (come on... 5 TABLESPOONS?! You're kidding right?) so I added about 3 tsp and that was perfect. Next time, I will use 1 Tablespoon of pepper instead of 2; there was too much pepper flavor. I used the Crock Pot to cook this. Cooking on High for about 4 hours should work. Just make sure to check water level constantly, as it dries up much faster than on the stove. I think I ended up using 10 cups of water total, and it was deliscious!

Spicy Cheese Quick Bread

Wonderful, fast and easy bread!! Spices can be added or changed according to your meal. I love spicy food, but adding extra Cayenne just doesn't work well with the recipe. I cook it in a pie pan so I can cut it in wedges for dinner - cook time is about 20-25 minutes for this type of pan. I also add about 1/8-1/4 cup more milk, or it seems too dry and dense. It's been a hit every time!
