Marinated Mushrooms II

I made this for a Halloween potluck and it was a hit. I thought I had made enough for leftovers, but not the case. Not a mushroom left! This is really easy to put together and you can make it well in advance. This will be on my Thanksgiving menu for sure.

Cream of Pumpkin Soup

This is a wonderful soup. Very simple and fast to make. You can adjust it to your taste easily. I did not bother with the croutons. I pureed my onions first instead of transfering and blending boiling liquid. This made the process faster and, in my case, safer. I used fat-free half and half instead of heavy cream. I served this soup at a party last week and it was a hit. I was asked for the recipe several times.

Slow Cooker Mongolian Beef

I made this a few days ago. It was a hit. I did take the advice of others and used 1/4 C. brown sugar. You must use LOW-SODIUM soy sauce with this recipe or it will be way too salty for most. This was even better the next day. I will be making this again and again.

Greek Lemon Chicken Soup

I make this soup at least once a month. We cannot get enough of it. It is very easy and quick to make and ike most soups, it tastes even better the next day. The only adjustments I make are I start with 1/4 C lemon juice and cut the chicken base to 4 TBLS and I add cornstarch to thicken it instead of the flour. We do not even add the rice. It is great on its own!

Indian-Style Rice with Cashews, Raisins and Turmeric

This rice was wonderful. Lots of flavor and texture with the cashews and raisins. Easy to make and delicious. It is even better the next day. I will certainly be making this again.

Tomato Gorgonzola Soup

This was really good. A perfect autumn soup. I added more gorgonzola and dried and fresh basil because I love it. Next time I will blend up the tomatoes B4 adding to get a smoother soup.This tastes even better the next day(if it lasts that long).

Sweet and Spicy Green Beans

Loved this recipe. I used white soy sauce so that the color of the beans did not change. I added about 1 tsp minced ginger to the sauce and at the end I added a small handful of toasted sesame seeds. It was salty and sweet with just a hint of spice. Perfect for my family. I will definitely be making this again.

Mexican Chocolate Chili

This was easy and tasty. I do NOT like really spicy food and this was perfect for me and my family. You can't taste the chocolate, but it gives the dish some depth. I added 2 gloves of chopped fresh garlic to the meat and onions and then 1 more in the slow cooker. I also added 1/2 tsp of cloves. Don't care for corn in my chili, so I left it out. Added an extra tsp of chili powder for a total of 1 TBS. Leftovers were really good. Will definetly make this again.
