Sweet Potato, Carrot, Apple, and Red Lentil Soup

This was delicious. I made some substitutions based on what I had on hand. I used coconut oil instead of butter, dried ginger instead of fresh, and chicken broth instead of vegetable broth. I also followed some other reviewers' suggestions and added a few cups of chopped spinach at the end and left everything chunky instead of pureeing it. Will definitely make again!

Vegetarian Chickpea Sandwich Filling

Excellent base recipe!! I'm sure this recipe would be excellent just as is, but I added some hot sauce, chopped almonds, and grapes for a little sweetness. I also used green onions instead and added a little bit of mustard. Served it with romaine on whole wheat bread...YUM! I'm sure it will be even better tomorrow after the flavors have time to meld! I will definitely be making this again! Thanks!

Acorn Squash

This was really good, but I felt like butter was the most prominent flavor. The butter soaked right into the squash (which was delicious) but it needed something else. Next time I'll add some cinnamon and nutmeg to give it more flavor. Overall great recipe!

Broiled Grapefruit Crisp

Excellent flavor! However, it was rather difficult to get the meat of the grapefruit away from the rind making it hard to eat. Next time I'll pull the fruit away from the rind and cut it in sections before baking it in the rind.

DELICIOUS! I added a lot of different veggies along with what the recipe called for. I also added about a tablespoon of garam masala. YUM YUM YUM! Served with garlic naan. Will definitely make this again!

Garbanzo Bean Chocolate Cake (Gluten Free!)

Really good...more like a cakey brownie than actual cake as it sank a lot after cooling, but was quite tasty. Didn't taste beany at all. I would definitely add the vanilla suggested in other reviews and top with strawberries/raspberries/whipped cream. Tasty and relatively healthy!

Quinoa and Black Beans

absolutely delicious! i have made this recipe twice now and plan to make it many many more times. i add a bell pepper to the onion and garlic saute and a can of diced tomatoes and a can of green chiles with the broth. Really easy to change up the recipe to suit your tastes. YUM YUM YUM! Update!! Made this again today and added 2 tblsp of lime juice....DELISH!

absolutely delicious!! I have tried this recipe twice. The first time I used 2 cans of condensed milk, one fat free and the other regular and it was AWESOME! the second time I used both regular and it was too rich. I also used reduced fat sour cream for both recipes and it was a major hit! thanks!

White Chocolate Grapes

YUM YUM YUM!! I thought these sounded interesting but strange and thought I'd give them a try. I didn't have peanuts so I mixed crushed walnuts and and crushed pretzles and rolled them in that! AMAZING! I made half of them completely rolled in the mixture and the other half just dunked and I actually preferred the dunked ones. The grapes I used were pretty small so the dunked ones balanced the flavors nicely! Thanks for sharing!!

These are delicious! Made them in the muffin tins as suggested by other reviewers. Turned out perfectly moist and yummy! I ran out of ketchup so I had to use part tomato sauce and they still turned out great. Definetly will be making these again! Thanks!

Spicy Black Bean Cakes

After reading all the rave reviews of this recipe I was excited to try it. However, after making it exactly as stated, I was disappointed, as were my guests. The cakes don't seem to have enough flavor. The lime sour cream is awesome and was the only saving grace for this recipe, but as is this recipe is just too bland.

Slow-Cooker Chicken Tortilla Soup

Delicious! Definetly just throw the chicken breasts in frozen and shred towards the end. I topped it with store-bought tortilla chips, avocado, shredded cheddar cheese, and a lime sour cream that was divine! Mixed about a 1/2 cup reduced fat sour cream with a tbsp lime juice, diced red bell pepper, diced jalapeno, and chopped cilantro! YUM!
