Baked Kale Chips
FANTASTIC, even if you're not a health NUT! I decreased oven temp to 325 degrees, used cooking spray instead of the olive oil, and a bit of sea salt the first time. The ENTIRE family loved it! Trust me though... you can add whatever spices you are craving and it will be wonderful. (have since used on different occasions garlic and onion powder, lemon pepper, cayenne pepper, etc...) Try this - You'll LOVE it!

Slammin' Salmon
Marinated for 10 hours in the fridge inside of a gallon zippie bag. I used sesame seeds - no oil at all. I didn't grill, but instead baked covered at 400 degrees for 10 minutes or until fork flaky and cooked all the way through. I did use the marinade for a reduction sauce (served under the salmon on the plate). I placed the marinade in a sauce pan for about 15 minutes, adding a bit of white wine to enhance the flavor. A huge hit with the entire family!!

Thai Cucumber Salad
This IS heavenly! Out of this world flavor coupled with super easy prep work = a winner in my book! I did add shredded carrot and thin red onion slices as another member suggested in their review. I used the wrapped english cucumber, so no seeding was necesary. (thus making the recipe even easier). I also added a tad more chopped UNSALTED peanuts than called for. Yum!!
