Soft Oatmeal Cookies

This is my favorite oatmeal cookie recipe...the recipe that others ask me for after trying the cookies. They are perfect--soft and nicely spiced. I make them exactly according to the recipe. Some of my taste-testers layered these with cream cheese frosting to make whoopie pies.

White Cheese Chicken Lasagna

Baked Potato Salad I

This recipe is just okay. I was expecting more of a potato salad, but I would definitely put this in the casserole category. I used sour cream instead of mayo and omitted the olives. It was very thick and clumpy. For the record, it is NOT good eaten cold--it just tastes like cold mashed potatoes when it cools. Most of my guests enjoyed it, though.

Pumpkin Bread

This is by far the best pumpkin bread recipe I have ever tried. I made the bread as a special treat for my cousin, who was visiting from out-of-town. The two of us finished two loaves in under six days. Excellent flavor!

Corn Pudding

Honestly, I was not thrilled the first time I tried this recipe. I did decide to try it again for a big dinner, but I made some changes. I used two cans of each style corn, 2 cups of fat free sour cream, ONE egg, 1/2 cup butter, and 1/4 cup sugar. (Plus one package of corn muffin mix.) I liked it much better than the first time, and our guests ate most of it. I ended up throwing out the majority of my first batch.
