Butternut Squash Bisque

Made this for the first time tonight and it's just wonderful. I did make a few adjustments to make sure it wasn't bland (added a diced jalapeno & a little ginger), didn't bother with the cream but added a dollop of sour cream to my bowl...YUM! Can't wait to have some more tomorrow! Thanks so much for sharing. (OH, definitely cook the squash first - I pierced it and put it in the oven at 350 for @40min and it was so easy to manage)

Eggplant Parmesan

Oh, YUM! We are not huge eggplant eaters - and when we do have it, I usually bread and fry the heck out of them. Trying to be healthier eaters, this recipe caught my eye (since I had just purchased a couple eggplant at a veggie stand). SO delicious, so fresh and didn't feel terrible about having a second helping! Went over really well at a picnic soon after, too (nothing to bring home). Thanks so much for sharing!

Bacon Wrapped Smokies

Rave reviews on this recipe! After reading comments, the only change was to coat the bacon with the sugar first before wrapping. Brought it to a New Year's party and they were gone in minutes - afterwards, friends begged me to make them again for our Super Bowl party. So easy - just a bit time consuming.

Oven Baked Jambalaya

I recently made this for my (sometimes picky) family of 6 and my father-in-law. I started on the stove top, but then transferred everything to the crock pot (thawed shrimp went in during last 10-minutes or so). I made the rice separately. It was put on the table and boy did they eat! There was just enough left to send some home with Dad and still have about 3-4 bowls left for next day's lunch. It's been about 3 weeks since I made it and I'm still getting raves and requests for more! Can't wait to bring it to a holiday pot-luck! Thanks for a great recipe Joslyn.
