Banana Crumb Muffins

A fabulous recipe. I made it as written and it was just sinful! The second time I made it I was short on butter but had an extra banana on hand so I substituted coconut oil and used a 1/4c less sugar. The results were equally delish! Thanks so much Wendy!

Curried Honey Mustard Chicken

This recipe was simply superb! I followed the ingredients list exactly but used 3 chicken breasts because mine were enormous and very thick. So that they would cook evenly, I pounded them out a bit and tucked under the thin edge. Admittingly, I didn't have time to marinate, but the flavor combination was just too exciting to wait to try. The end result offered unexpectedly complex flavor that was both robust and balanced, and the chicken was incredibly moist. I am sure marinating would just make it that much better! I paired it with a side of garlic herbed couscous cooked in chicken stock. It complimented the chicken well. Thank-you very much for the submission!

Chocolate Coconut Cream Cheese Frosting

I had no problems with it setting up like a few other reviewers reported, though I was a little worried it might not until I added the coco powder. It had a nice creamy texture, spread beautifully, and was more than I needed to ice my 9x13 sheet cake. As for the flavor, it was just "ok" for me. It is a nice quick frosting in a pinch, but just held no WOW factor.

Monkey Bread I

Simply Wow! I only omitted the raisins and opted to bake this heavenly yumminess in a stoneware loaf pan instead of my tube pan. Thought I should heed all the warnings. It turned out divine! Thanks for the recipe!!

Angel Hair Pasta with Garlic Shrimp and Broccoli

This recipe was great! I subbed half and half for the heavy cream, used whole wheat flour instead of regular, black pepper instead of white, omitted the parsley, and used fresh broccoli. These modifications were only due to ingredients I didn't have on hand. I for sure will make it again, just not often due to the high fat content.
