Amish Breakfast Casserole

Delicious! I made one with bacon, one with sausage & one with sauteed vegetables for a work function. They were all amazing and got rave reviews. Definitely a keeper!

Apple Banana Cupcakes

I substituted the shortening with applesauce, omitted the buttermilk, used half white/half whole wheat flour and doubled the banana. They turned out more like muffins but were freaking awesome! Definitely going to make again.

Turkey Bake with Whole Wheat Pasta

I added diced green peppers, onions & garlic to the meat while it was cooking. Used cottage cheese instead of ricotta and added a small can of mushrooms to the sauce mixture. Its a good base recipe.

Chicken Spinach Quiche

This was fantastic! I seasoned the chicken with some taco seasoning & ground cumin, added an egg and only used 1/2 a cup of milk & 1/2 a cup of miracle whip. It came out perfect & I will definately be making it again soon.

Oatmeal Raisin Cookies I

While they're not as thick as some other oatmeal cookies, I think they're still really good. Everyone I've offered them to has asked for more so they can't be as bad as some of the previous reviews say. 2 thumbs up from me!

Funky Enchilada Casserole

This was delicious! I left out the tortillas & spooned it on to tostadas AFTER it was done baking. Topped off with sour cream, fresh diced tomatoes, shredded lettuce & hot sauce. Also goes great with spanish rice, mixed in or as a side.

Zucchini-Chocolate Chip Muffins

These are very tasty. I wasn't paying attention though and added a whole 12 oz bag of mini chocolate chips instead of 1/4 cup. Oops...that was a bit much so will definately be reducing those next time. Regardless, they're very good - you can't even tell there's zucchini in them!

Terrific Turkey Chili

The only thing I added was a can of drained sweet corn. The heat was just right and even my beef loving boyfriend was raving about it. I will definately be making this again very soon!

Blueberry Zucchini Bread

This recipe is definately a keeper. I substituted whole wheat for white flour, half brown sugar for white and half applesauce for oil. I made it in 2 9x5 loaf pans instead of the mini loaf pans & took one to work. It's a wonderful alternative to the traditional zucchini bread & everyone that tried it loved it.

Pear Bread II

This bread was delicious! I did substitute white flour for whole wheat, applesauce for oil & some brown sugar for white sugar and it came out perfect. The recipe made 2 9x5 loaves so I took one in to work and it was instantly gone. Even my boss (who doesn't like sweets) gave it rave reviews. I will definately make it again and would recommend it to anyone looking for something different.
