Basic Chicken Stock

This was the first I had heard of using an egg to clarify the stock, and it worked BEAUTIFULLY! My stock was already on the stove when I came across this, so I didn't use the same recipe, but I'm giving it 5 stars for revolutionizing the way I handle a homemade chicken noodle soup craving..I was ready to eat it greasy, so thank you!

Beer Braised Irish Stew and Colcannon

This is the only beef stew recipe I can imagine ever using again. I made it as written, it was delicious. I doubled the beer to make it soupier and added about 1 1/2 tb of brown sugar to cut the bitterness, and it was delicious. I made it today but just added the potatoes diced, used 32 oz of beef stock (had a recovering alcoholic eating with us) and a fresh tomato, and it was delicious. Can't really go wrong with this one.

Egg Fried Rice

1) You must use cold rice to make proper egg fried rice. If you are really in a pinch, spread it out on a pan and broil it under low heat, stirring frequently, to get some of the moisture out. This isn't ideal and the texture will still be effected, but it is much better than using rice fresh out of the pan. 2) Oil makes it taste..well, oily. Use butter instead. 3) I just add the soy sauce once the rice is in the pan.

Refried Beans Without the Refry

I'm stumped. I followed this recipe exactly, but there is just something weird about them. I think it must be the smell, because the beans themselves are bland, and even eating them as a thin spread between homemade tortillas with Mexican rice, habenero sauce, sour cream lettuce and tomato is still making my stomach turn a little. I don't think I'll even bother saving the leftovers. The recipe is too basic (beans in a slowcooker) to even give it some credit for being a good base.

Beef and Broccoli

Following this recipe will leave you with something that reminds me too much of fast food BBQ sauce. I was able to make it edible before adding the broccoli, but I still barely finished half my plate (I am not a picky eater and hate wasting food) It was extremely salty even I after I diluted it with my additions. The idea of using tomato sauce in a similar dish is intriguing, but this whole recipe would need reworked to make it successful.

Delicious Ham and Potato Soup

So simple, so delicious. I've made it three times in two weeks. I add some sliced carrots, boil the little ham bone that's in the sliced ham I buy, and use some unpeeled red potatoes if I have them. Prep time is almost zero, i just toss in everything as I slice it, starting with the potatoes, then carrots, celery, onion, and ham.
