Grilled Caribbean Chicken Breasts

Wonderful! I used tabasco sauce for the hot sauce, next time I will use something with a little more kick! The chicken marinated for about 2 hours before grilling, I am certain it would be more flavorful soaking overnight. The only changes I made were to add a tsp of Kosher salt, and I cooked down the used marinade and poured it over the finished chicken. Served with rice which was a perfect match for the citrus flavors.

Quinoa Black Bean Burgers

These were pretty good! My carnivore husband ate 4! I doubled the recipe and ended up cooking my own beans. The picky teenagers were a little bit hesitant but once they tried it they thought they were pretty good. If you are expecting these to taste like meat, you will be disappointed. Definitely a filler for a Tex-Mex meal.

Grilled Rosemary Chicken Breasts

Excellent! A lovely combo of flavors, very Mediterranean. I used a course grind Dijon mustard and had to pan fry, but I cannot wait to make this on the grill! Served it on top of fettuccine noodles.

Banana Cream Pie V

This is just what I was looking for; a cream pie that does not require the use of a box of pudding! I have made this pie several times, it is my oldest sons' favorite! I have added chocolate chips to this pie with great results. The only change I have made to this recipe is to add more bananas to the pie; one is just not enough.

Beat and Bake Orange Cake

Excellent recipe. I used a vanilla frosting for the filling, and added mandarin oranges so when cutting into the cake you had a surprise!

Skillet-Grilled Catfish

Fantastic! Used Swai fillets instead of the catfish, and cooked in a cast iron pan on the grill. All I was missing was some lemon!

Banana Cream Pie I

Fantastic. A scratch pudding pie without the use of a box mix! I use the leftover whites and make a meringue to top the pie with before I put in into the oven.

Creamy Sweet Corn

YUMMY! I have never had creamed corn before; I doubt I'll ever eat the canned stuff now. I would much rather make it myself! This was really yummy, the only change I made was to use my stick blender a bit to thicken up the creamy sauce.

Absolute Mexican Cornbread

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

Yum! I have never had fish tacos, so for a first attempt I thought these were wonderful! Very flavorful! I used the broccoli slaw mix instead of straight cabbage just for variety. Fresh pineapple on the side!

Strawberry Roses

The directions for this are misleading; they should read 'gently mix together the cheese, powdered sugar, and vanilla'. Beating the cheese causes it to separate. Even thought I am an accomplished cook, mascarpone cheese is not easily found and so I have not ever used it.When I found this recipe I thought it would make a great topping for a lemon chiffon cake I was making for a party, and since I follow directions to the letter proceeded to BEAT the cheese...... so I ended up with $6 of cheese down the drain and a concoction that looked like ricotta! The flavor was good, but I thought a tad sweet so I would recommend cutting the sugar by 1/2 a cup. I ended up using this recipe but with cream cheese (and not as much sugar) and it turned out great for my cake.

Chocolate Cream Cheese Frosting

Only 4 stars since I altered the recipe to make it a mocha frosting by adding 1T of instant coffee to the chocolate and I also added heavy cream instead of the evaporated milk. Still wonderful in my dark choc cake as a filling.

Buttermilk Pancakes II

Don't try to make these with powdered buttermilk!!!!! My first attempt I tried the powdered buttermilk, the second I used the real deal. A 100% difference! Light, fluffy; everything a pancake should be. Yummy! Better than that famous box mix and as an added bonus; none of the preservatives!!
