Juicy Deer and Bacon Burgers

I made these burgers tonight and my husband and I both loved them. I didn't have much ground beef so I used mostly venison. I added some Spike seasoning to the meat mixture as well as some Worcestershire sauce and beer. Otherwise I followed the recipe exactly. I'll definitely make these again.

Spinach Stuffed Chicken Breast

I followed this recipe exactly except I used regular jack cheese because my husband doesn't like spicy food. I did add a couple shakes of Tabasco to the filling because I put Tabasco in everything. Anyway, it came out GREAT. It even looked like the picture. The other thing I did differently was to cover the baking dish with foil for the first 35 minutes because our oven tends to dry things out. A few minutes uncovered under the broiler browned and crisped the bacon nicely and left the chicken still moist and delicious. Great recipe, Jersey Girl!

Quick and Easy Mexican Chicken

Bacon Risotto

I used shallots instead of onions in this and used less bacon and less rice because I make risotto every two weeks or so for my family of three and know that we always have leftovers when I use one cup of rice. I added some fresh basil and tomatoes right at the end of cooking, before I added the parm and butter and this was delicious. Both my husband and my toddler loved this dish, which is saying something. Excellent recipe- and our house smells divine in the aftermath.

These cookies came out perfectly! I used butter instead of shortening, but otherwise followed the recipe exactly. (The recipe doesn't say to, but I buttered the cookie sheet before baking.)

Kentucky Biscuits

At last - a biscuit recipe I don't have to spend 15 minutes rolling around before I just give up and make drop biscuits. This recipe is like Mary Poppins- practically perfect in every way. (Could maybe use a little more salt.)

Anniversary Banana Pudding

I'm giving my own recipe five stars because my sister-in-law and my dad raved about this pudding and they are usually very quiet and don't talk much. I don't know how the pudding tasted because my family finished it off before I could get any. :)

Delicious Cranberry Sauce

I'm making this now and tasting as I go along. It's easy, quick, delicious. I added a pinch of salt and some lemon juice to tone down the sweetness a bit. Tossed a couple of cinnamon sticks in, too.

Pecan Breaded Chicken Breasts

Ground the pecans, mixed them w/ panko and flour and used a combination of pan-frying and baking. The pecans clung to the chicken fairly well but some of the coating got too dark and some fell away. I'll definitely make this again, adding more spices to the maple syrup to enhance the flavor.

Slow Cooker Chicken Taco Soup

I didn't have any beer so I used a combination of wine and chicken broth for the liquid. The chili had an odd aftertaste I think was caused by the wine. If I make this again, I'll just use broth.

Steamed Radishes

This recipe doesn't mention that the radishes will blow off the dish's cover in their attempts to escape the microwave-safe dish and tinge the inside of your oven pink. Other than that, I liked this treatment of radishes. I added salt, butter and lemon juice and enjoyed these much more than I've ever enjoyed them raw.

Lemon Chicken Tenders

The sauce wasn't thickening after about 10 minutes of simmering, so I made a slurry using more lemon juice and cornstarch and stirred it into the hot sauce. It thickened up nicely and we enjoyed this dish a lot. I put the sauce on some sautée spinach and it was DELISH.

Thighs on Rice

I tweaked this recipe by adding onion, carrots and celery that I had sweated in olive oil, but it still didn't have much flavor. It also took a lot longer to cook than the recipe states.

Lemon Butter Chicken

I prepared this chicken according to the recipe, only omitting the lemon pepper and lemon zest. The sauce seemed thin and watery and didn't have much flavor. I don't think I'll be making this again.

Vaselopita - Greek New Years Cake

I followed this recipe exactly and the cake was completely raw (meaning LIQUID) inside when I took it out of the oven. I cooked it another 30 minutes and the cake was still soft and a bit runny in the middle even though the top was starting to turn a bit too brown. The flavor of the cake is very good, though. The temp and cooking times just need adjusting.
