Spaghetti al sugo di cipolle varie

VegQuest 2011 continues with "Spaghetti in the Juice of Several Onions." Odd name, yummy dish. The recipe is from a book called "The Classic Pasta Cookbook" by Giuiliano Hazan, son of Marcella Hazan. It calls for shallots, leeks and red onions cooked
(to a practically juiceless state ) in quite a lot of olive oil. The long, slow cooking really brought out the sweet quality of the leeks and red onions. The recipe calls for a generous toss of grated parmigiano reggiano and parsley at the end. Because
we now live in Podunk Texas, our local grocery store doesn't carry real parm and the ice and snow kept me from going to get any more. I made do with some domestic parmesan that didn't have much saltiness to it. I think some real parm with its salty bite
would have cut through the sweetness of the onions. I'll make it again, but probably not any time very soon.
We got three veggies in us that night, though, and I forgot to take a picture of the final product because we were all freaking starving. :-/
