Grandma's Lemon Meringue Pie

This was my first time making either a meringue or a custard, and I am so glad I read some of the additional comments. Great tips there if you're inexperienced! The pie turned out very pretty and very tasty. Will probably make again.

Good flavor, but I must have done something wrong; mine did not set well, and I ended up having to freeze it--no one complained; French Silk Ice Cream Pie was a hit.

Garlic Cheddar Chicken

French Leek Pie

So amazing! This is such a great recipe, and the best thing about it is how versatile it is. As you can see from so many of the comments, it's easy to cater to your tastes and what you have in the fridge. I liked the suggestion of sauting the leek in baccon, and I added mushrooms and spinach because I had some hanging around the house. The flavor is warm and filling and a perfect comfort meal. A definite repeat recipe.

Tangy Plum Liqueur

Mine came out on the sweet side. I'm not sure if this is due to the type of plums I used or the amount of sugar in this recipe. Guess I'll have to try again next year ;). Very good in plumtinis.

Pumpkin Brownies

Wonderful! I kind of lopsided my brownies when I was dividing them, so they're kind of heavy on the pumpkin side--darnit, I guess I'll have to make them again and get them perfect. They're very rich, almost too rich, but balance out great with a scoop of vanilla ice cream or nice creamy coffee.

Easy Fried Eggplant

Very tasty, very easy. Next time I think I'll try and slice the eggplant very thin to get a little more crisp to it. Also, be forewarned that the slices shed bread crumbs in the pan, which can burn fast. Either use a pan big enough to do the entire eggplant at one go, or have a secondary pan ready to go.

Good cookies, but I think next time I will try them with vanilla instead of anise. I was not familiar with anise, if I had to describe it, I'd say it's kind of got a licorice aftertaste to it, which I'm not sure if I like. This recipe was simple, with a good pay off, nice consistency in the cookies, and a great toast that holds up well in coffee.

White Bean Chicken Chili

Honestly, I just used the spicing suggested here, and put what I wanted in the chili. It turned out really well, and I'll have to remember this spice combination; not too hot, very flavorful.

Sour Cream Apple Pie Deluxe

Really tasty pie, great flavor in the filling. The topping is a little too sweet so I'll probably cut the sugar down next time--and there will be a next time. I also would recommend wrapping the edges of the crust in tin foil before baking and serving the pie with a big glass of milk. *Edit, 5/2002--Had to up this to five stars. I've made it multiple times now, and had multiple requests for it. It's so easy and so delicious. Absolutely worth it. Bake this pie.*

Cider Vinegar Chicken

This was...unique. It's kind of a funky flavor, not bad, but probably not something that I would make very often. There's a very vinegar tang to the chicken, and I think it would mellow out nicely with an apple salad or something else that would take out a little of the acidity. *I found out the next day that these are really good for chicken sandwiches; a little mayo, a little toast, and I actually enjoyed it more than I did fresh from the oven.*

Roasted New Red Potatoes

Really good! The first time I've ever roasted potatoes where they came out tender and cooked through all the way. I think next time I would add some extra salt and maybe some additional seasoning, but these would be so good under a beef gravy.

Marinated Chuck Roast

Very tasty. I wasn't sure what broiler setting to use, so I went with low; with seven minutes on each side, I had something just on the medium rare side. The meat was juicy and flavorful. I think it would be good in a salad or wrap as well.

Homesteader Cornbread

Very tasty cornbread, but mine did not look like the picture. I was hoping for more of a crispy outside, but I mostly got a cake that had more of a bread texture. Next time, I think I'll try a different pan or baking option to get more of a crust on it.

Roasted Garlic Mashed Potatoes

Sooooooooo good. There's a nice garlic flavor here without over powering the potatoes. The cheese blends in nicely. I used my mom's traditional mashed potato method (mayo, butter, and milk), but added the seasoning suggested here. It really adds great flavor to potatoes.

Roast Sticky Chicken-Rotisserie Style

Delicious chicken! The meat was tender and moist, the skin was crispy and flavorful. Absolutely great recipe. Two things; when I took the chicken out of the bag, I was concerned about where the rub had been removed by the plastic so I mixed up more of the seasoning to cover the spots, and I regret that decision as it ended up being too spicy in those places. Second, be sure to use a roasting rack; I used a short one and the juice/fat that leaked from the chicken was almost up to the birds.

Chocolate Mice

Rich and very chocolatey. The only thing I would do differently, would be to make the mice about half the size recommended in the recipe; bite sized. Overall, a fun and tasty recipe. I used them to decorate a cheese cake, and they were a big hit.
