Creamy Carrot Soup

Reviewed: Nov. 22, 2008
The five stars are a reflection of how my soup actually came out rather than the original recipe. The first in my numerous substitutions was the spices. I decided to make a more savory soup by using cumin, coriander, garlic, and cheyenne pepper (all to taste). Though if using cheyenne pepper, keep in mind that leftovers gradually become spicier. To cut down on the fat, I used whole milk instead of cream and tossed in a couple spoonfuls of sour cream. A bit of starch was used to thicken it up to my preferred consistency. Next time I may jazz it up even more by adding in some cheddar cheese. To eliminate the unflattering ring of butter that floated to the top, I'll cut the butter in half and add some olive oil next time. All in all, very excellent!

Deep Dark Chocolate Souffle

Reviewed: Sep. 9, 2005
For a person who has never made or eaten a souffle before, I honestly didn't know what to expect. However, I was pleasantly surprised with the outcome of this recipe. I did like previous views suggested and added 2 oz of bittersweet chocolate and I had to substitute the Dutch processed cocoa for regular cocoa powder, but it still turned out great. One suggestion that I make myself is to add an additional 2 T of sugar. Alone, the bitterness of the chocolate can easily be tasted, but once paired with ice cream, that problem can easily be overlooked.

Toll House® White Chip Chocolate Cookies

Reviewed: Mar. 22, 2004
Over all, this recipe is only so-so. From all of the reviews that were given to it, I was expecting something truly spectacular. Sadly, I was a little disappointed. Next time, I think I'll up the amount of sugar and add a little more cocoa powder as well.

Mom's Zucchini Bread

Reviewed: Jun. 3, 2002
This was a very good recipe, very simple, but even with the addition of nutmeg and raisins, I felt something was missing. Don't get me wrong, I would definately make it again!!!

Banana Boats

Reviewed: Nov. 16, 2001
A very ineresting recipe. It was the first time I've ever had anything like it, and I must say they're delicious. I had to cook mine in the oven longer than 5 minutes, more along the lines of 12.

Blackberry Pie I

Reviewed: Aug. 9, 2001
An absolutely fabulous pie!!!!!!! I found a mistake in the recipe's list of ingredients. This pie calls for a double pie crust, not a single pie crust.

Applesauce

Reviewed: Aug. 2, 2001
This recipe was fabulous!!!!! I'll never buy the pre-made applesauce again. Instead of running the cooked apples through a blender, I mashed them in the pot using a potato masher. By doing this, little chunks of apple were left in the sauce. I also added a bit of cinnamon for a twist.

Fruit Fizzies

Reviewed: Jul. 29, 2001
This recipe was very interesting. I made a few adjustments though. I used orange juice instead of grape juice. I scaled the water down to 1/4 cup and the juice to 3/4 cup. It tasted just like orange soda, only better.

Fortune Cookies I

Reviewed: Jul. 29, 2001
These cookies were excellent. They were a little hard to fold, but they tasted great. I adjusted the recipe a little though. I added 2 teaspoons of mellted butter and decreased the sugar to 3 tablespoons.

The pancakes were a little bland. I found them to be a little soggy too.

Easy French Toast

Reviewed: Jul. 26, 2001
Overall, I didn't like this recipe. I'm not sure if that was the correct amount of cinnamon, but two tablespoons of was too much for the recipe. No matter how long I cooked them, my toast stayed soggy. They were also very bland. I would not recommend this recipe.
