Spinach Tortellini Soup

I probably doubled the amount of broth this was supposed to have but otherwise I made it as written. I used fresh basil instead. It was fantastic!

Black Bean Brownies

I thought these were ok. They definitely weren't the best brownies I'd ever had. I added some baking powder like some reviewers suggested. I think if I made them again I wouldn't do this. They made the brownies too cake like. I also added extra cocoa and vanilla and I couldn't taste the beans at all. This was the first gluten recipe I've ever made though so maybe it takes some getting used to.

Pumpkin Spice Bread

This bread is delicious! It also makes great muffins! Since I really like this bread best when it is fresh, I usually put the batter into muffin cups and freeze them unbaked. Then I just pull out as many as I want for a meal and cook them for 20 minutes at the same temp. They're so good!

Easy Mexican Casserole

This was a very good base recipe. I didn't have all of the items so I made quite a few changes. I used lentils instead of beans, I added a can of healthy request cream of chicken soup, and I added a layer of rice in the middle of the meat salsa mixture and I baked it in a smaller rectangle pan instead of a 9x13 pan. My husband and I both really liked it!

White Cheese Chicken Lasagna

This was very good! I did make a few changes. I probably tripled the garlic in the sauce and I also added more parmesan. I only used about 1/3 of the amount of butter called for, to try and make up for the extra calories from the extra cheese. I mixed the spinach and ricotta together to make layering easier. I also grated a carrot and added it for color, and extra veggies. I made this when I was having friends over for dinner. We all loved it! I will definitely be making this again, but not too often since it's pretty high calorie, but delicious!

Homemade Plain Yogurt

I make this all the time. I use skim milk though and I almost never have powdered milk so I just skip that. For the incubation period, I put the yogurt in jars and place them in my small ice chest. Then I fill water bottles with hot tap water, cover the ice chest, and change the water every couple of hours if I think of it. Sometimes I make this in the evening and let it incubate overnight so I don't change the water. It always turns out great. I usually add a little vanilla or raspberry extract and a little sugar. It tastes so good! I serve it with dinner almost every night. I like it better than store bought yogurt.

Amish Friendship Bread I

I don't know what I did, but this did not turn out. The top of the bread and the edges all ended up burnt. I've never had problems with my oven running hot. I substituted 1/2 c wheat flour like someone suggested on here and it just made the bread so heavy. I was very disappointed. This wasn't at all like what my mom made when I was little. I think I'll try it again next time with all white flour and pudding mix, like someone suggested.

Quick and Easy Alfredo Sauce

This was a pretty good alfredo sauce. It was a little stringy though, but I think that is because I put in too much cheese. I used the grated kind in the bag, not that powder stuff in a can, so that might have been why. Next time I'd put in 4oz like the other reviewers recommended. I used fat free cream cheese and skim to cut down on calories. I used minced garlic since I like it better. It tasted good but next time I'll put in more since I like a garlic-y alfredo.

Cinnamon Pumpkin Waffles

These waffles were quite good. I didn't have any wheat germ so I used oatmeal instead and that turned out quite well. These tasted very good and I was impressed with the healthy ingredients. The waffles were a little heavier than I'm used to but I'll make them again. I might use 1/2 white four 1/2 whole wheat though.

Pumpkin Cheesecake I

This pumpkin cheesecake is fantastic! I did make some changes though. First of all, I used low fat cream cheese. Also, I didn't have any ginger or nutmeg so I substituted 1 tsp of pumpkin pie spice. I was making this for a work party so I made cupcake cheesecakes instead of making it in pie pans as the recipe suggests or a spring form pan like a traditional cheesecake. I put some graham cracker crumbs in the bottom of each cupcake paper, filled them 2/3 full and baked them at 350 for 20 minutes. Everyone loved them and my husband can't wait for me to make them again for Thanksgiving!

Valentino's Pizza Crust

I followed the directions but when we ate it, the edge was overcooked and very crispy like a thin crust pizza and the dough in the middle was pretty much raw. I think the rawness could have been prevented if I baked it on a lower rack in the oven but the outside would have probably been even crunchier. Also, the dough was so wet that I couldn't handle it to roll out until I worked in more flour.

Boston Cream Pie I

I made this cake to celebrate my first wedding anniversary and me and my husband both loved it! I read the previous reviews for this dessert and since everyone who actually made the cake said it didn't turn out well, I made a different cake from a recipe book. (also, boston cream pie is usually a 1 layer cake cut in half, not a two layer cake, it would make it too thick I'd think) Anyway, the custard turned out very well. It had a very mild flavor to it and wasn't too sweet like some puddings. I thought it tasted great with the chocolate. I actually messed up the glaze and only put in half as much sugar as it called for but it ended up turning out just fine, and more glaze like than this picture indicates. I think I'll do it that way again.

Brennan's Irish Soda Bread

I made this bread tonight with some potato soup and my husband and I both LOVED it! We ate almost the entire loaf just between the two of us. We saved a little bit just so we could see what it would taste like cold. I agree with the other reviewers, the bake time is way too long. I cooked it about 25-30 minutes and it came out perfect! Also, instead of kneeding it on a floured surface and making a round loaf, I put it in a bread pan and it turned out fantastic! To the person who said it was a wet lumpy dough, that's how it was for me too. I didn't add any more four and just baked it and it turned out great! I'll definitely be making this again!

Artichoke & Spinach Dip Restaurant Style

This dip is delicious! I've made it several times and haven't found any big significance between using chopped garlic from the jar or roasting your own. I also used a whole block of cream cheese instead of half a block. You'll never have leftovers if you make this! I like to serve it with whole grain sourdough bread.
