Spinach Enchiladas Verde

I made this tonight with a few variations. I added a handful of frozen corn to each enchilada as well as some fried onions and refried beans. I doubled the recipe and used 2 jars of Ortega Salsa Verde with one container of sour cream. Fantastic! Excellent vegetarian dish. Will definitely make this again, and probably mix it up a little each time. I also made homemade salsa to put on top and spanish rice II (from this website) on the side. Yum! A hit with everyone!

Spanish Rice II

This was delicious and easy. I added some garlic powder, a fresh chopped jalapeno from my garden and ground cumin. Be careful it does burn easily and need a bit of stirring, but definitely a keeper! I made this with spinach enchiladas verde from this website. Excellent!

Minestrone Soup I

Awesome recipe although I modified a few things. I used olive oil instead of butter. I added a diced zucchini, used a vegetable boullion cube boiled in water instead of chicken broth (to make it vegetarian for my boyfriend). I also used orzo instead of elbows and added fresh chopped parsley and basil from my garden. I also substituted fresh baby spinach instead of cabbage. Absolutely fantastic! Served with garlic bread. Hearty and filling. Way better than Minestrone I have eaten in a restaurant!

Vegetarian Kale Soup

I made this soup for a quick dinner tonight served with buttermilk biscuits. It was really delicious! I didn't have any potatoes so I substituted pre chopped butternut squash from the supermarket. I diced the squash into small bite size cubes for quick cooking and it was delicious. I also served some homemade hot sauce on the side (I like it spicy but my BF does not). Great easy & healthy soup on a chilly autumn night!

Pork Tenderloin with Dijon Marsala Sauce

Excellent dish. I made a few revisions based on what I had on hand. I used an organic sauvignon blanc, and finely chopped onions and garlic in place of shallots. I also used only a few TB of half & half in place of the cream to keep it a little lighter. I also added a TB or so of cornstarch and water to thicken the sauce. I roasted the pork tenderloin with some whole garlic cloves inserted into the roast with a rub of olive oil and sage, salt and pepper. I wrapped it in foil to conserve the pork juices. It came out delicious! Will definitely make this again!

Vegetarian Chili

This is delicious! I made some small modifications based on what I had available in the house... I used 1 can of each black beans, kidney beans and small white beans. I also used canned diced tomatoes with green chilies. I also used cayenne instead of chili powder and threw in a diced red pepper. I cooked it for about an hour and added some "Gimme Lean" fried veggie sausage. I served it with tortilla chips, crushed into the chili. Best chili ever!

Basic Vegetable Stock

I never thought of making my own stock until I came across this recipe, and I am so glad I did! I add a bigger variety of veggies than this recipe calls for and cook it much longer (about 2 hours) and it comes out great! I followed the advice of another reviewer and freeze veggie scraps for a couple months, then throw them into the broth. Awesome for making quick soups. I am cooking some right now and will freeze it into ice cube trays! Yum!

Ethiopian Cabbage Dish

This dish was easy, cheap and tasty. I cut back the oil and doubled the spices as recommended by other users. The only thing that bothered me was that it took way longer for the potatoes to cook than written. I cooked it for over an hour. I think the potatoes and cabbage should go in at the same time. It is supposed to make 5 servings, but it felt more like 10! I froze the leftovers and have a couple more meals for my BF and me.

These are delicious and loved by everyone! Great for parties. I had enough filling for 2 sheets of puff pastry. Maybe I didn't roll out the dough enough. It was awesome anyway!

Sweet and Spicy Dipping Sauce

This is easy and delicious! Just the right balance of sweet, salty and spicy. Served with homemade veggie spring rolls. I could just eat it by the spoonful though! I added a tiny bit of cornstarch dissolved in water to thicken. I imagine it would be delicious on tofu, chicken, shrimp, pork, anything! Thank you!
