Chicken or Turkey Tetrazzini

This is a perfect way to use left-over Thanksgiving turkey and is different enough not to seem like yesterday's dinner. The whole family loved it. I took the advice of several reviewers including sauteing the red pepper with the onion and including it in the casserole. I also sauteed some mushrooms with them. Pefecto. I used about one cup of cheese in the sauce -- quite adequate -- and one cup for sprinkling on top later. Plenty. I used broth not milk -- good because the spaghetti should be slightly under-cooked after boiling, and will sop up the broth. As another review recommended, I toasted up some panko crumbs and also used the toasted crumbs on top. The only butter I used in the recipe was in the toasted crumbs. I sauteed the veggies in olive oil. The only two cans of cream soup I had on hand was mushroom and asparagus. The combo turned out fabulous. I'll use the same thing next time!

Upside Down Turkey

The biggest problem with this recipe, is you don't have nearly enough leftover! I did a few things differently -- like used a combo of white wine and chicken stock in place of water. (I didn't find prepared turkey stock). I also added a bit of poultry seasoning to the butter and creamed them together. I put it over the bird (not separating the skin) and into the cavity. I used more butter than the recipe called for. I also cooked the turkey in a sealed aluminum tent. I didn't turn over until about 3/4 of the way through the cooking time. The bird really turned out ugly. You really couldn't take it to table and carve-- but it was the most delicious turkey ever. All agreed! The next day, even the leftovers were incredibly moist. However we had no crispy skin. Next time,I think I'd turn it right side up sooner, and remove the foil sooner -- but only for the skin lovers. You could make a turkey just like this -- if you want a great tasting, moist turkey. Also, next time I'd make a bigger one (ours was just over 11 pounds) -- it was so good, we hardly had any left overs.

Yummy Sweet Potato Casserole

The basics are here -- but the recipe as it stands was way too sweet for our family. The yams themselves were pretty good as it stands -- but since they have sugar in them, the sweet topping is just overwhelming. Next time,I'll make the topping with more nuts, less brown sugar, and use less topping over all. It just needs a little topping to add some crunch -- not to add sweetness.

Salmon Patties II

Amazingly easy -- and the whole family liked it. I did add a few drops of Worcestershire sauce, onion powder, and a rib of finely chopped celery -- but I think if you don't have on hand, it can do without. I used Jiffy mix -- and rolled finished patties in Panko Crumbs. The panko added body and texture. We will definitely be making these again and again. Economical too!

Fettucine Carbonara

My family really liked this. I had a lot of bacon to use up so tried this. I never, ever follow any recipe -- it must be a quirk I have -- so I made this a tad healthier by using canned milk, and egg whites. My son had some of my fave -- New Castle Ale on hand-- so I had to throw some of that in too Just a bit. Awesome. Use ground flax seed to thicken sauce. Oh, yes -- my family for some odd reason doesn't particularly like Parmesan -- so I used a combination of Asiago and Mozzarella. Everyone really liked it! Thanks for a great recipe.

City Chicken

This is a real crowd pleaser. Can't do a recipe without tampering -- so, I added a pinch of powdered coriander to the flour. Really wakes up the flavor -- but remains subtle. Also, I used a fairly flavorful chicken broth mix (powdered) and skipped the bay leaf. Family raved! Be sure to salt and pepper both the flour and the meat.

Quinoa and Black Beans

What a great combo. Black bean and quinoa were made for one another. I soaed myt quinoa for about 1/2 hour before as another reader suggested. I also used only one can of black beans, because that was enough for me. I only had dried cilantro available. Of course, the freshe would be better, but this did the trick. Loved the dish! This will become a regular for a nice, quick vegetarian dinner on work nights.

Potatoes Supreme

Made these for Easter all but the onion because we have one anti-onion member of family. Also, this timeI used Edam cheese and a bit of mxed cheeses,to be holiday"fancy."I made them for Easter, putting them into the crock pot as we headed off for church. As my potatoes were small, made about 10. Turned out great- We had no leftovers and the recipe was great tasting with Easter ham. Definitely will become a tradition for holidays.

Greek Orzo Salad

Great and easy. I did a few substitutions based on what I had on hand. Also - made 1 1/3 cup of orzo -- slightly more than the recipe called for. Used green olives, no black on hand. Terriffic! Also used about 1/2 cup of asiago cheese. Seasoned mine with McCormick's Salad seasoning (about a tablespoon)-- gave it a nice pep.

Juicy Grilled Corn On The Cob

Perfect, easy way to make corn - and all loved it. At first, everyone thought you had to do SOMETHING else - certainly not put the corn directly on the barbie. But -- this corn is delicious despite it's simplicity.
