Baked Potato Skins

These are exquisite! I felt like they were better than TGIFs. I'm making them for Football night tonight. They are great piping hot, but still good when they are cold.

Butter Cake

I didn't find this to be coarse at all. It was super fluffy and delicious. Very easy recipe to follow. I had whole vanilla beans so I put the seeds in and it made a beautiful vanilla bean cupcake. Definitely saving this recipe.

Oatmeal and Wheat Flour Blueberry Pancakes

Excellent! I loved these. I did half applesauce and half olive oil and another readers suggestion. I didn't have soy milk so whole milk instead. I did add the vanilla and a sprinkle of cinnamon. I was a little worried about the runniness of the recipe, but they cooked up perfect. I didnt' have just blueberries so I used frozen mixed berries and I am in love with these pancakes!!

Homemade Flour Tortillas

Agree with some of the other comments about adding flour since it was such a sticky dough. This recipe is extraordinarily easy and goof proof. I loved the texture.

Irish Potato Casserole

I baked it at 400 like others suggested, but I wished I had also cut down on the butter. This was way too greasy and that was after adding a lot of potatoes. It is slightly bland. Definitely edible, but nothing I'd be craving. Probably won't be making it again.
