Fast Creamy Tomato Penne

My Family loved this - even the picky 16 year old! The only adjustment I made was to add pesto to the sauce right before mixing with the pasta. I also used the leftover filling from dinner the previous nite - Beef & Bean Chimichangas! Yummy!

Broccoli and Tortellini Salad

Fantastic recipe. Made it for a church dinner and it was gone in a flash! Loved it so well made it at home for dinner. I added a TBL of red wine vinegar and kosher salt. This is definately a keeper!

Carnation® Quiche Lorraine

Family loved it - and they don't like quiche. I used mild sausage and about 1/2 C more shredded cheese. Great with fruit salad for dinner on hot summer nites.

Easy Chicken Enchiladas

This is FANTASTIC! I used a can of Rotel, drained in place of the chilies, used a little more cheese just because you can never have enough cheese. The family loved it. This is definately a keeper!

Make-Ahead Slow Cooker Beef Stew

This is definately a keeper! Easy to make and the whole family loved it! I did flour and brown the meat on the stove, but don't see this as a needed step if it is cooked on low. The only wine on hand was a cabernet, so used it and it tasted great. Will definately make this for both home and church.

Corn Casserole I

This was ok - not great as I expected from the reviews. I doubled the recipe and it took forever to cook. Ended up putting it in a pan on the stove for the pasta to cook, stiring so the cheese would not burn. Added about 3/4 - 1 cup seasoned breadcrumbs once the pasta was done. Tasted a little bland. May make it again, may not.

Oven Barbecued Beef Brisket I

This is SOOOOOOO Good!!!! Definately a keeper. Easy to prepare, smelled great while cooking and no mess! Tasted wonderful. Have tried this before but never turned out . Worked great in my Pampered Chef stoneware baker.

Sopapilla Cheesecake Pie

OH MY - FABULOUS & YUMMY!!!!!! This is not only easy but wonderful. Used fat free cream cheese - no one could tell - didn't have mexican vanilla so used 2 tsp pure vanilla extract - AND, softened the butter too much in the microwave for the topping so mixed it with cinnamon & sugar anyway, brushed it over the top - tasted fantastic - definately a keeper.

Smoky Chipotle Hummus

One of the best Hummus recipes around! The only adjustment was I increased the chipolte peppers to 2 and poured some of the "sauce" from the can into the chickpeas and added about 1/2 tblspoon of sea salt. So much can be done with this - will try adding garlic next time. Will definately make again.

Slow-Cooker Chicken Tortilla Soup

Very good and flavorful. Used some leftover baked chicken which I shredded and worked out great. Also, instead of whole tomatoes smashed Used a can of diced fire roasted tomatoes which added a little extra flavor.
