My first tarts ever!
About this Cook
I'm a gal with a guy and three dogs. I love cooking maybe more than eating! With my high level of self efficacy, I can do anything, cook anything...you name it. I live at high altitude (8250')in a super dry climate so I'll enjoy trying out the dessert recipes and posting back with any high alt changes. I know I'm not the only one up here!
My favorite things to cook
I love trying new things especially if they seem difficult or complicated. I also love simple and easy to make foods. Tops on my list: anything with rice, especially brown, basmati or sticky; soups; chili; pasta; risotto. I like changing recipes, mostly dessert recipes. Cutting the sugar content in half or changing from white flour to whole wheat is a favourite of mine.
My favorite family cooking traditions
Canadian baked beans, a depression-era dish of my great grandfather's--we've all made this time and again. Dad's cooking which means either Mexican (or anything with beans, cheese, tomatoes, sour cream and shredded lettuce) or ground turkey with veggies, tomatoes and pasta. Mrs Cubison's stuffing, gramma style. Onions, lots of onions!
My cooking triumphs
I make pretty good pasta sauces from scratch sans recipes. Those fruit tarts were out of site. My first real chocolate mousse. My first high altitude bundt cakes...if the neighbor's dog hadn't eaten most of one. I love the book Pie in the Sky by Susan Purdy. It has really helped me to bake at high altitude with much more confidence and has helped me make things up here that I had been having trouble with.
My cooking tragedies
My first lemon cheesecake cookies tasted like raw dough...luckily, they were good when baked longer! The stuffed red peppers I made when I was 15. That was a tough year, I also made incredibly good caramel that I (for some strange reason) poured into styrofoam cups.

Best Brownies
Awesome, quick and easy! These are definitely somewhere between a cake and a fudge brownie but remained moist and tasty. I altered the recipe some, partly due to being at 8250 altitude and partly due to our liking things less sweet and without actual eggs in it. I used egg replacer (the brown and orange box) instead of eggs and used sucanat (dried molasses granules) in place of white sugar. For the altitude, I scooped out about two tablespoons less sugar, added a tablespoon of water to the 'egg' mix and reduced the baking powder to 1/8 teaspoon. I did not decrease the fat however! I'm below 9000 feet so I just can't see the point in reducing something as yummy as butter. I did use earth balance vegan butter though so the whole recipe turned out vegan. Last thing I did was to use a mini muffin pan instead of a square pan. Thank you for such a perfect recipe!!
