Aztec Salsa
My fiance' and I LOVED this! I was browsing for a side dish for an enchilada casserole and I had an idea to use corn and black beans but did not know quite how to execute that idea. I also thought to make a very simple guacamole and serve with chips or just a lettuce and tomato salad. This recipe kind of combined all three ideas, with the black beans, corn, avocado and tomato. YUMMMY! I served this on a leaf of butter lettuce with tortilla chips and a steak enchilada casserole and this side dish stole the show!! I will make this again!

No-Peek Beef Stew
This was the first time I made a beef stew. This recipe was a great base but I did try to make this like my grandpa used to. I omitted the red wine and added baby carrots, peas and red potatoes. I left this in the slow cooker for about 7 hours. It was tasty, not quite how grandpa used to make but I'm sure he would be proud. Serve with garlic bread or french bread.

Spinach and Feta Pita Bake
These delightful little snacks were sooo scrumptious and super easy! I used plain pesto instead of the sun dried tomato pesto but other than that followed the recipe exactly. I love the versatility of this dish, it really can be anything you want it to be. I served this pizza like creation with a huge green salad for dinner, it was perfect for a quick meal! I could see getting creative with the sauces and toppings too! I will surely make this again.
