Szechwan Shrimp

Love it! We make this a few times per month, so easy and yummy! I double the sauce (and the garlic/onion, too) and serve it over rice. Mmmmm.

Chipotle Crusted Pork Tenderloin

This was the first pork tenderloin I have ever made and it turned out perfect! I only used 1.5 T of chipotle chili powder because mine seems to be on the spicier side. 20 minutes on the grill was the perfect amount of time. It was a big hit!

Quiche Lorraine I

Whenever I make a quiche, I buy frozen pie shells and double the recipe so I can make two at once. With this recipe, I noticed that I only needed 1 cup of cream per quiche, I think you would end up with a soupy quiche if you used 2 cups of cream for a single quiche! Anyways, I've made a lot of quiches in my lifetime, and this was one of the best!

Delicious Black Bean Burritos

Cedar Planked Salmon

I'm clearly the minority here, but I wasn't really a fan. I soaked my cedar plank for about 1.5 hours, which wasn't enough time because it caught on fire half way through cooking. Awesome (not really). I finished the salmon in the oven, and after all the hassle, it wasn't even that great. Too salty (despite using low sodium soy sauce). I love salmon and I'll be sticking with my old cedar plank salmon recipe.

Chickpea Salad with Red Onion and Tomato

Homesteader Cornbread

This was fine. I thought it was a bit bland, dry, and smelled "eggy" to me. Personally, I think the Vegan Agave Cornbread Muffins from this site are much, much better.

Spinach Quiche

I loved this quiche. It reminded me of spanakopita, too. I read the other reviews and made these changes 1) Only used 1tbsp of butter 2) Skipped the feta, didn't have any, added extra cheddar instead 3) No salt 4) Made two quiches! Split the spinach mix in half and use 4 eggs and 1 cup of milk in each quiche 5) Mixed the spinach/eggs together before putting in the pie crust. The quiche was even better the second day.

Quinoa and Black Beans

Loved it! We eat a lot of quinoa and I needed a new recipe to change things up. I used chicken broth (it was all I had) and only one can of beans (I think two would be overkill). Served it with BBQ chicken. Yum!

Whole Wheat Sweet Potato Muffins

These were good. I would have liked a recipe that specified the amount of sweet potato to use, I found myself wondering if mine was too big or too small, or if the amount even made a difference. I cut down the amount of honey to 1/2 cup, and found that the muffins were too bland for my liking. Next time I'll use 3/4 cup. My guests enjoyed them, though!

Slow Cooker Turkey Breast

This is my favourite way to cook turkey! Especially when I'm cooking for a small crowd. I always use a boneless breast/thigh roast and it cooks in about 4 hours. I put about 1/4 cup of chicken broth in the bottom of the slow cooker and the meat comes out so moist! I also love how this frees up my oven to make other side dishes or veggies. Makes the house smell amazing!

Sugar Free Brownies

I have gestational diabetes and all I've wanted lately is a brownie! Made these and the truth is, a regular brownie is ten times better - but for a sugar-free brownie, these are pretty darn good! I did add a little bit of baking powder to combat flatness. My opinion: the brownies are better without the pudding on top. They are nice and fudgey and took care of my craving on their own.

Restaurant-Style Coleslaw I

This was good coleslaw. I did find it a bit on the sweet side, but really enjoyed the flavour that the white wine vinegar added. The only reason I give it 4 stars is because I'm not satisfied that this is the best coleslaw recipe out there - it is much better than anything store-bought though!

Grilled Salmon I

Awesome!!! I've made this a few times now and love it. I do mine on the BBQ and make sure to prepare extra because I love the leftover salmon on salads the next day. I marinate mine overnight for extra flavour. So good!

Bannock is delicious! Seems like everybody has their own family recipe, and I have been lucky enough to try many of them. This was my first attempt at making my own. I formed the dough into smaller patties and cooked them in a deep skillet with lots of oil. They came out great, and are only made better served with blackberry jam :)

Classic Bran Muffins

Thank-you! I was looking for a healthy, great tasting bran muffin to have as a grab-and-go breakfast during the week. I use WW flour instead of AP, and I replace the oil with a mashed banana or some low fat vanilla yogurt. Great recipe!
