I'm a health-conscious "flexitarian" with an interest in baking and a terrible weakness for cupcakes. I try to eat as clean as possible, and avoid red meat and dairy whenever I can.
My favorite things to cook
I love baking. Probably because I love eating baked goods. I've also become a fan of my slow cooker. I'm a busy gal, but I still want to make tasty home-cooked meals - the slow cooker is my ally.
My favorite family cooking traditions
Every New Year's Eve we have a fondue! It's a 10 year tradition, still going strong.
My cooking triumphs
Whenever someone comments that the dish I made was delicious, or when someone asks me for my recipe, I consider it a triumph. I also consider it a triumph when I cook an amazing meat dish, like prime rib. I am not a fan of red meat, so when I cook "blind" and it gets rave reviews, I pat myself on the back.
My cooking tragedies
I have yet to master the broiler on my oven. Everything I have broiled thus far has filled the kitchen with a smokey smell and left me frustrated ... oh well, I'll get there eventually.

Chicken Florentine Casserole
This dish was good, but not something I'm dying to make again. I think the best part was the sauce - I might make that and incorporate it into a new dish.

Easy and Fast Cajun Chicken Caesar Salad
Some might say a chicken caesar salad is a no brainer, I say: make this one. I made up the chicken ahead of time and kept it in the fridge, this way I could assemble salads as needed. The key is to use a good dressing, I like Renee's Mighty Caesar from the refrigerated section. This salad rocks!

Blueberry Breakfast Sauce
YUMMY! So easy to make, and so tasty! I used frozen blueberries right out of the freezer. I originally put this on top of "Blueberry Flax Pancakes" and it was awesome. Now I've got to find ways to incorporate this sauce into all of my breakfasts :)
