Baked Ziti III

Great recipe, but use a larger dish! The first time I made this, I used a 2.5 quart dish and it overflowed and was a total mess. I made it again using a a 4 quart rectangular pan, everything fit nicely this time. Both times I made this I prepared it in the morning, put it in the fridge, and cooked it later. Perfect dish for making ahead of time. The leftovers are fabulous!

Simple Scones

These were so delightful! There's no need to freeze and grate the butter. I just took butter straight from the fridge, cut it into table-spoon sized pieces, and used a pastry cutter to combine it with the dry ingredients.

Mom's Zucchini Pancakes

I added a bit of grated onion to the zucchini and used seasoned salt. It came out really good. I would have added a bit more spice, however I was cooking for picky kids so this was great as is. Getting the zucchini dry was a bit of a hassle. I ended up grating about 1/3c more zucchini because I was losing so much as it kept sticking to the paper towels. However, the results were worth the extra work. I got my picky kid to eat zucchini without resorting to bribery.

Black Bean and Rice Enchiladas

Good basic recipe that you can easily modify to suit your tastes. I used a can of plain chopped tomatoes and a can of diced green chilies; that added a nice level of spice. I also used Trader Joe's enchalada sauce over the top. I also put cheese in with the rice mixture. I ended up with more rice mixture than what would fit in the tortillas; but that was find because that was tasty on its own.

Amish Breakfast Casserole

I made this for Christmas brunch and it turned out great! I followed the recipe as written, however, it is a nice basic recipe that seems easy to modify. I completely assembled it the day before so all I did that morning was put it in the oven.

Apricot Cobbler

It's a good recipe, but the crust didn't warrant a 5 star rating. The description should not say "crumb topping" as this is definitely a biscuit topping. I like biscuit-style cobbler toppings, but the texture was a little too heavy. I sprinkled a little sugar over the the topping before I put it in the oven; it gives it a nice sparkle when finished.

Spinach Garlic Pasta

This recipe would not be very good if you followed it exactly. However, with modifications, it was very tasty. I used fresh chopped spinach, 5 cloves of garlic, extra butter and olive oil, roasted pine nuts, and served it with some fresh grated parm. For an entire pound of pasta you need more than just 1 tablespoon. I kind of lost track how much I used because I was using a stainless steel pan and didn't want it to stick.

Orange, Honey and Soy Chicken

A really good and easy recipe. I didn't have ginger or garlic paste; however, finely chopped fresh ginger and garlic worked just fine. I sauteed red bell peppers, onion, and carrots and then set those aside while I cooked the chicken and the sauce. When the chicken was done, I added in the veggies and mixed it all together. A definite make again!
