Lemon Chicken Piccata

Excellent - followed a few tips -- more garlic -- mixed the chicken broth with half chardonnay --used lemon zest rather than slices --and added lots of onions & mushrooms with the garlic -sautéed 5 min in olive oil and butter mix -then added the broth/wine mixture; lemon zest & parsley -chicken back in pan to cook - covered- for 20 minutes- low simmer. Served over white rice --- Very Very delicious!!!

Garlic Salmon

Very nice and moist, but don't assume that because it is in foil it can't be overcooked! I bought soft butter, mixed with the garlic & dill and spread on the filets - nice extra touch Will definitely make again

Bacon Wrapped Pesto Chicken

Very easy and really excellent recipe - my changes were to pound the breasts to 1/4 to 1/2 inch - sprinkle a little garlic powder on each along with a tablespoon of parmesian cheese ( on top of the pesto) - roll up and secure. Then I drizzled a very small amount of olive oil on each - turned out just GREAT

Firecracker Grilled Alaska Salmon

Barb and I thought it was excellent - grill for sure - not an oven recipe. Next time, will double the marinade, boil, and serve with the finished product. Used fresh ginger, but other than that, followed the recipe -- and agree with some, may be great on chicken, etc.

Slashed Sea Bass with Red Onions, Mushrooms, and New Potatoes

Excellent recipe - but you must use Chervil -- I found at Meijers with other herbs - i.e.thyme, etc.- Gave it a very nice flavor -- I also added 3 garlic cloves to the onion/mushroom mixture -a nd when they are softened, add the new potatoes ( but cut them up first) --Two other things - be generous with the Chili Oil - I brushed it on generously - bth sides - and don't worry - it gives no heat after cooking. Just a nice gentle kick - and make sure you warm the pesto before scooping over the fish. Great recipe and we'll definitely make again.

Dijon Crusted Halibut

Way too bland - Halibut needs more flavoring - I used fresh horseradish but hardly any flavor. Will not make again unless I can figure out a way to kick it up.

Baked Halibut Steaks

Very Good - had to use flounder as Halibut was not available - added extra garlic & basil - but best enhancer was to sprinkle the fish with Italian Seasoning - really made it great. Will definitely try again when Halibut is available

Miso and Soy Chilean Sea Bass

Absolutely Awesome - the sea bass melts in your mouth - baked at 400 for 15 minutes - turning once - came out perfect. Marinated for full 6 hours - so easy and delicious. A definite repeat.
