Prize Winning Baby Back Ribs

The rub gave the meat a fantastic flavor, but my ribs needed to cook way longer than an hour. I had them in an hour and fifteen minutes, and they looked ok but cutting into them one of my two racks was underdone. I've thrown the pan of them into the oven for a while to finish them, and hopefully they will be ok. I think my grill was set TOO low, so next time I will monitor the heat a little better. Great potential, though. Taking off that membrane was a hint I'd never heard before, and it really made a difference! I'm hoping to be able to upgrade this review to 5 stars the next time I make them -- just need to cook them long enough!

Bratwurst, Potato and Cabbage Soup

Outstanding! The only ingredient I changed was using a can of low sodium chicken broth instead of the water (although I added about 1/2 cup water to give enough liquid to cover bratwurst and potatoes). I also cooked the onion with the bratwurst meat, because I prefer my onion to be browned in soups. Other than that, I followed the recipe as written and it is fantastic. Thanks for such a great, easy dish! ETA: I think the blandness other reviewers experienced had to do with the type of bratwurst they used. Be sure to get a good, "real", fresh Wisconsin bratwurst and you can't go wrong!

Black Bean Vegetable Soup

This was delicious! I followed the suggestions of other reviewers and made a few changes: Two 14 oz. cans of low sodium chicken broth instead of the vegetable stock, a third can of beans, two stalks of diced celery. I used a larger 15 oz. can of no salt corn, because I didn't see any small cans at my store. My husband LOVED this soup, as did I. One daughter declared it to be "not bad" and the other wouldn't try it because she hates everything. I will make this again and again for my husband and me, and the girls can have tomato soup from a can!

Slow Cooker Stuffing

I made this for Thanksgiving and it was fantastic! I halved the recipe (except for the herbs) because I was making it for only 4 people. I used store bought whole-grain bread, about 1 pound, that I cut up into cubes and dried out in my oven. I left out the mushrooms, because I didn't have any. I added diced apple, and cashews. I would have liked to add some pork sausage -- definitely will next time. I used a full 14 oz. can of broth at the beginning, and during the cooking added about 1/2 of a second can. I think I will also increase the amount of poultry seasoning and other herbs next time, as the whole-grain bread has a stronger taste that overshadowed the other flavors. This made for such an easy dinner prep! I loved having the extra oven space!

Slow Cooker Beef Stroganoff I

This is a lick-the-plate-clean sort of dish, that's for sure! I doubled everything, with no ill effects, because I have a bigger crockpot. Leftovers actually freeze well, too!

Best Spinach Dip Ever

This is absolutely the best spinach dip ever!!! I put it into a loaf of sweet hawaiian bread, and I practically have to beat guests off with a stick to I can get it to the serving table. Really, really delicious!

Butterscotch Apple Cookies

My cookies fell apart. I liked the taste, as did my family, but they literally turned to crumbs after cooling. I think I would try this again as a bar cookie -- maybe it would do better in a pan.

Strawberry Oat Muffins

These didn't rise very well, and had sort of a gummy texture. My husband and older daughter liked them well enough, but I didn't care for them at all. I don't know if the proportions were jazzed up somehow, but the muffins just didn't seem to bake up properly.

Golden Potato Soup

I LOVED this soup -- made a couple of changes. Double everything! Instead of water and boullion cubes, I just used a couple of cans of Swansons chicken broth. This was a super Fall meal!
