Angel Hair Pasta with Garlic Shrimp and Broccoli

I made this for a St. Nicholas Day dinner party for my parents and my friends last week, and it was such a hit!! I was nervous about making the white sauce (I get really paranoid about burning things) but fortunately had someone else to help and whisk/stir the sauce. Eventually though she was put to work in other areas, and we turned the heat down a bit and stirred occassionally. I followed the recipe exactly except for the type of pasta used (I had linguine on hand). It was so flavorful and easy to throw together. I paired it with an Italian salad, a light chardonnay, and carrot cake cupcakes for dessert. I will definitely make this again! Easily a new favorite dish to make for guests!

Chile-Garlic Shrimp

Oh wow, this has a kick to it! But it's so delicious. I didn't change anything to the recipe at all. I served it with plain white rice. I will definitely make this again, for myself and for parties!

Creamy Potato Lasagna

I made this for the first time for the first dinner party at my new apartment. My parents and my best friend loved it, as did I! I did make some minor changes though. I used garlic alfredo sauce which definitely helped with the flavor. If you have regular alfredo sauce, I definitely recommend following previous reviewers advice and adding garlic powder to each layer. I had the hardest time finding diced ham! So instead I fried up thick slices of bacon (keeping them as fat and juicy as possible) and cut them into nickel sized pieces. Also, I'm vegetarian. So instead of combining the meat, cheese, and broccoli all together, I actually just mixed the cheese and broccoli first, then set a little more than 1/2 cup of it aside. I mixed the meat in with the rest. So half of the dish had bacon, the other half did not. Still very tasty and very easy to separate! Finally! I felt that the top was kind of wet looking with all the alfredo sauce, so I sprinkled shredded sharp cheddar cheese for the last 15 minutes. Added a nice flavor and a very pretty coloring!

Beth's Spicy Oatmeal Raisin Cookies

I just made this tonight for a Christmas present and they came out AMAZING. I don't know if the person I'm giving them to likes raisins, so I just left those out. The cookies are still super tasty and soft. I did add chocolate chips in the second dozen I molded...they are baking as I write this! I'm so pleased with these cookies! Oatmeal cookies are my favorite so I can't wait to make them again!

Sweet Potato Casserole VI

I made this for this past Thanksgiving and it was a huge success with my family! I don't particularly like sweet potatoes (unless it's a pie) but everyone had seconds and raved about it. I did sprinkle a few marshmallows on the top for the last 10 minutes of baking or so, just so it'd be kind of gooey. I'll definitely be making again next year!

Mama D's Italian Bread

I had a ball making this bread and it came out delicious! I didn't change much, if anything, to the recipe or the way I baked it. It was delicious! I brought them to a wine and cheese party and it was a big hit. I also made my own seasoned oil to serve with it. Excellent recipe!

Basil, Tomato and Mozzarella Sandwich

So good and easy! I think this combo is one of my favorite sandwiches to date. I'm not a huge fan of vinegar but the red pepper flakes sounded really tasty. Unfortunately, we were out of vinegar so instead I just spread Italian dressing on the inside of the bread like a sauce. I also toasted mine for a bit in a toaster oven. It was amazingly delicious!! I'll have to try it with the vinegar next time.

Quick and Easy Pizza Crust

I've been trying to make pizza for a few years now and it's always been good...but could always be a lot better. This pizza crust is exactly what it says: quick and easy. And delicious! I love that you don't have to let it rise before forming on the pan (though I did let it sit to the side for about 10 minutes while I cut up veggies and mix my sauce. I don't think it makes too much of a difference). It came out exactly how I love my crust; not thin but not super bready. A very good happy medium. It's also by far the best crust I've ever made. The only thing I did different was I let it bake in the oven without toppings for about 5-8 minutes. I pulled it out and let it cool for a bit. After that I kind of pressed down on any "bubbly" areas to make sure it was even. After that I spread the sauce and topped with lots of cheese, peppers, onions, feta, and fresh tomatoes. So awesome!!

Homemade Black Bean Veggie Burgers

I am a relatively recent vegetarian and was very hungry come lunch time. So on a whim I figured I'd try making a black bean burger instead of a Boca burger. This recipe is freaking amazing. I did make some minor modifications (which mirrored some of the ones in other reviews). I get a little freaked when I have to use lots of hot spices and such, so I cut the Cumin down to 1 tsp. and used 1 cup of bread. I only formed one patty and baked it at the temp. the recipe called for. Though in the last minute or so before I pulled it out to eat I put a piece of cheese on top and let it melt over it. So delicious! I formed and wrapped up 3 other patties for the freezer and can't wait to make them and share them with my friends and family. Great recipe!!! :]
