Benny's Famous Jalapeno Poppers

Great recipe. Like the combo of cheddar and cream cheesse. Will try pepper jack cheese next. I usually make the Williams-Sonoma recipe and this one meets the mark ! I freeze my peppers from the summer and hollow them out in advancem, stuff and grill. Delish.

As previous mentioned, wrap in bacon, have also used turkey dogs, all cut into 1/3 pcs, secure w toothpick and ziplock overnite, bake for 35- 40 min on a parchment lined sheet. Totally the bomb !

Roasted Tomatoes with Garlic

Absolutely the best way to cook up the summer garden bounty....experiment and use flavored oil, and as some have suggested herbs. Cool tomatoes and bag in a zip bag, freeze, and enjoy in the dead of winter....yummmm make into pasta sauce etc. Doesnt get any better.

Garlicky Beet Delight

Great recipe, i however roast my beets, and used balsamic vinegar which was an interesting twist. Roasting is easy especially when you are prepairing something else with the oven on. Simply wash, cut in half, pierce the beet, place flesh side down on a baking sheet lined w parchment and add some water. Peeling is a breeze, and all the goodness and vitamines arent cooked out .

Rice with Herbes de Provence

Wonderful recipe, even easier and fool proof using the rice cooker...put it all in, shut the lid and in no time at all its moist, flavor is perfect and warm until ready to use.

Baby Zucchini Salad

Exlnt...I also used yellow Zucchini, fantastic color and tried White Balsamic vinegar. Perked it up and the flavors of the onion, pepper and basl really stood out. Keeper for sure....

Slow-Cooker Corned Beef and Cabbage

I have always done the same as Debi..sometimes over nite if my day requires earlier serving, yes add the pepper corns, some garlic too doesnt hurt. Never have tried the beer but would think it would be good. I add the veggies mid way or even after in a seperate pot and allow the meat to sit.
