Wake-Up Casserole

This was really yummy! I used sausage because I didn't have ham. I also didn't use as much cheese as it called for and I cooked the hash browns in the oven for about 15 minutes. I only needed to cook the casserole for 50 minutes. Really good!!!

Oh my goodness!! 10 stars!! This was sooo good. The kids all said it was the best. Definitely not cake, though...it's a brownie.

Aaahh! Potato Soup

This was really, really good. Even my picky daughter said so! I used half milk and half cream (half and half) instead of the heavy cream. It was still creamy enough. I think next time I will try using just milk and see how it turns out. Also...I doubled the recipe and found that it wasn't enough for the 5 of us. They were still asking for more. I think next time I will quadruple the recipe. :)

Quick Beef Pizza

This was reallly yummy. The soup seemed kind of sketchy to use on a pizza, but ended up being really good. My 16 year old told me this was the new pizza recipe from now on!

Yummy! I was tempted to add more jam because it didn't look like enough, but I'm glad I didn't...it would have been too sweet. The icing is yummy, too.

Fiesta Chicken and Rice Bake

This was really good. I did have to cook it longer (I made it for 6 people and so did it in a 9x13) and some of the rice was a little bit crunchy. However, the flavour was delicious.

Spaghetti with Bacon

I'm not sure about this one...I didn't put all of the olive oil on because it was mixed with the bacon fat. I added italian seasoning, but it still seemed like it was missing something. It needs some veggies or more spices.

Bacon-Roasted Chicken with Potatoes

This recipe was excellent. My oldest son told me that he would pay for this in a restaurant. Next time we'll cut the potatoes a little smaller so they cook more. Instead of wrapping the chicken (I used breasts), I just laid the bacon on top so it would cook well. The spice was just right. Even my picky daughter liked it.

BBQ Pork for Sandwiches

This was sooo good! I used a boneless pork roast instead of the ribs. I used a hickory flavoured bbq sauce. One of my kids told me that I'd been holding out on them!! Will definitely make this again....great idea for potlucks!

Slow Cooker Chicken Curry

This recipe was very bland and the juice did not thicken enough. I think if I tried it again I would add more curry and use a can of Cream of Chicken soup in place of one of the cups of water. The chicken was very tender, however so will definitely play around with it to give it more flavour.
