Japanese Onion Soup

After reading the review re: blandness, I decided not to strain out the vegetables. It seemed also to be such a waste of perfectly nice vegetables! I left them in, resulting in a very different soup, but very flavorful and somewhat hearty. As always, I added more ginger, garlic, chives because I enjoy very strong flavors. Would make again. Was fun to customize.

Eggplant Bruschetta

My first time making eggplant. Loved it! I used the long, thin Chinese-style eggplant and left the skins on. I just cut them into wide strips. I doubled up on basil and added fresh rosemary and oregano. Also added about 4 cloves coarsely chopped garlic. I cut some fat/calories and left out the mozzarella cheese. I first baked the dish for 6 minutes @ 450 degrees. I then threw a little extra Parmesan on top and broiled for 2 minutes. Came out delicious!
