Zesty Slow Cooker Chicken Barbecue

EXCELLENT & EASY!! I used a whole cut up raw chicken, put in crock with rest of ingredients, cooked on low for 4.5 hrs then shredded chicken, put back in for another 2 hrs. NOTE: 30 mins before done, sprinkled some cornstarch to thicken, might not have needed it but I didn't want it too thin -- the shredded chick does thicken the sauce. The smell throughout the day was amazing! I served on toasted Kaiser rolls w/coleslaw & sliced watermelon. Everyone ate these so fast I didn't get a chance to take a picture! Teens used leftovers for everything from burritos to omelets! GREAT RECIPE!! YUMMM

Black Bean and Corn Quesadillas

We are definitely NOT a vegetarian family & thought I might need to add meat -- but EVERYONE RAVED about these! Kids/teens ate the leftover mix w/chips the next day. Made as directed, only ADDING: CILANTRO & Garlic; used 2 ears of CORN off the COB (cooked) -- we have such wonderful sweet corn this time of year and this is a great healthy way to use it. This mixture is even great warmed up in a burrito w/eggs! Side note: for the salsa, I always use Salsa Casera (cans in Mexican section). AWESOME recipe!

Best Ever Saucy Beef Kabobs

Very good! But a little time consuming & messy. I used measurements exactly but subbed: V-8 for tom juice, Chili Sauce for ketchup, Smoked Paprika for regular, & used Chipotle Hot Sauce. Poured enough sauce to cover/marinate beef for 1.5 hrs (would probably be even better marinating for 24 hrs). Cut up veggies, drizzled w/Olive Oil, salt & pepper & tossed w/a little sauce to coat. Grilled about 4-5 mins per side, basting using only about 1/4 cup of sauce (saved the rest for leftovers!). Hubby loved them, he dipped in ranch - but I preferred just as they are. My stepson LOVES bbq sauce so I'll probably just make the sauce to put on about everything! Will make kabobs for only special occasions on a weekend due to time. Might try spicy V-8 & cayenne next time. Had good flavor, a little hint of spice but prefer a little more punch. Great base recipe!!

Mom's Zucchini Bread

aaaM-A-A-A-Zing!! I made this for a labor day wkd get-together and everyone raved over this bread! I followed the recipe exactly, substituting the walnuts for chopped pecans --- I forgot to mix them in the batter, so I sprinkled them on top -- omgoodness they were sort of caramelized and was the hit of the party! Must serve with butter though, the saltiness of the butter goes beautifully with the sweetness of the bread. My husbanad can't get enough! BEST RECIPE!!!

Tex-Mex Corn Chowder

This hit the spot on a snow day! Although I added the following: 1 cup diced potatoes, 1/2 can garbanzo beans, 4 oz of Mexican Velveeta, cayenne pepper, and garnished with Cilantro leaves. yumm! This made a lot, but very nourishing and filling! Even my husband and the kids liked it.
