Cheesy Chicken and Salsa Skillet
Tasty, simple & easy! Few changes: added garlic & onion to chicken; added leftover homemade salsa, fresh cilantro, fresh squeezed lime, black beans and sour cream to the sauce. Super filling and not too bad for ya either! Served over jasmine rice (pic added) because we're really not a pasta family) but next time will definitely make with the pasta! Great find! Even the teens wolfed it down!

Zesty Slow Cooker Chicken Barbecue
EXCELLENT & EASY!! I used a whole cut up raw chicken, put in crock with rest of ingredients, cooked on low for 4.5 hrs then shredded chicken, put back in for another 2 hrs. NOTE: 30 mins before done, sprinkled some cornstarch to thicken, might not have needed it but I didn't want it too thin -- the shredded chick does thicken the sauce. The smell throughout the day was amazing! I served on toasted Kaiser rolls w/coleslaw & sliced watermelon. Everyone ate these so fast I didn't get a chance to take a picture! Teens used leftovers for everything from burritos to omelets! GREAT RECIPE!! YUMMM

Black Bean and Corn Quesadillas
We are definitely NOT a vegetarian family & thought I might need to add meat -- but EVERYONE RAVED about these! Kids/teens ate the leftover mix w/chips the next day. Made as directed, only ADDING: CILANTRO & Garlic; used 2 ears of CORN off the COB (cooked) -- we have such wonderful sweet corn this time of year and this is a great healthy way to use it. This mixture is even great warmed up in a burrito w/eggs! Side note: for the salsa, I always use Salsa Casera (cans in Mexican section). AWESOME recipe!
