English Muffins

I used honey instead of sugar, butter intead of shortening, used only 5 cups of flour for a really soft dough, and when I kneaded the dough I sprinkled cornmeal in with the flour on the board - but these turned out to be as delectable as any english muffin I've ever had. Fork-splittable, toasted well, with all of the 'nooks and crannies', and excellent base for our own egg, bacon, and cheese sandwiches - or by themselves, with butter. The kids even eat them warm with peanut buter and jelly!

Chocolate Crackled Cookies

I used 1 cup of real butter instead of Crisco, and put in a bag of mint chocolate chips instead of semi-sweet. These were AWESOME!

Apple Sour Cream Streusel Cake

I made this in a hurry for a 'dessert supper' for a friend. I used a bundt cake pan and and added butter flavoring, as well as used canned blanched (not cooked) and chopped apples, only 2 1/4 cups of flour, a cup and a half of sour cream, and left out the apple jelly. It was excellent; a little crumbly on the surface like a good streusel cake should be, but not too heavy. I will make this again - it will make a good breakfast pastry too!

Delicious Raspberry Oatmeal Cookie Bars

OK, I added almond flavoring to the oatmeal mix, and drizzled it with cream cheese frosting flavored with almond. I also doubled the recipe because I was making a BIG batch for our Veteran's Day celebration. With over 25 different types of cookies and bars, mine went the fastest and people RAVED about them, going back for 2 or three more. The seeded raspberry jam didn't hurt the flavor or texture a bit - but I used a whole BIG jar of it. Very nice, and very pleased.

Pumpkin Whoopie Pies

I made these for a bake sale but I made a cream cheese filling instead. When the cookies came out of the oven, I pressed them with a large cookie cutter shaped like a jack-o-lantern, they were soft enough to take the imprint yet stand up to it without crumbling. Everyone raved about them! One of the teens whose mom bought some came up to me and told me he LOVED them; they "tasted like pumpkin pie"! I kept some for my DH and me, too - and, refrigerated in a sealed bag, they were great snacks even two days later!
