Chocolate Chocolate Chip Cookies II

as my 19 month old son said when he tried one "MMMMMMM!!!"... these are awesome cookies, moist, chocolatey. I am pregnant and was craving some double chocolate chip cookies like those grandma's ones you find in the store. These definitely fit the bill! I used regular cocoa powder, semi sweet chocolate chips and added an extra tsp of vanilla. mmmMMM! These are addictive! Moist, with just the right amount of chocolate taste!

Barbecue Tofu Sandwiches

VERY yummy, inexpensive, quick and easy! Use a good BBQ sauce and make sure you use extra firm tofu. i topped them with cheddar cheese and served with salad and lots of steamed veggies. mmmMMMM!

Super Moist Pumpkin Bread

This was the best bread! I did not have flaked coconut on hand so I omitted it. Instead of walnuts I added almonds (not toasted) cut in half and fold it it into the batter. They tasted wonderful! Also, I made pumpkin fudge which never set so I just melted that down and used it as a glaze on top of the bread. This bread is moist and flavourful! A hit with my husband and 16 month old. It only took 45 minutes to cook, if I had left it in the whole cooking time it would have burned. Yummy!!

Vegan Split Pea Soup I

This was SOOOOO good! Even my 11 month old son gobbled it up! I had to add alot more water, i forget how much more i added but it still turned out thick and wonderful like peasoup should be! it was not lacking in flavour, even without meat! i will definitely be making this again.. cheap and easy!

Butter Pound Cake

yum! i almost ruined this cake because my pan was too small and it started overflowing the sides and then took forever to cook in the middle, but it still ended up delish! it took a long time to make and was my first pound cake, but it was worth it! not too sweet, very heavy and moist...

Fudge Bonbons

these were soo good! i added almond extract instead of vanilla and it gave them an interesting flavour... i also rolled then in red and green coloured sugar and some in cinnamon... they were excellent warm when the kiss was still melted in the middle and the exterior was cooled... i will definitely be adding these to my xmas baking list and experimenting with different things in the middle...

Chocolate Covered Cherries

these were so good! so easy to make... i made a few changes to the recipe.. i halved it because i made way too many the first time around... i also found the first ones a bit sweet/rich, so i added about half the juice from one of the jars of cherries.... this made the dough alot stickier so make sure to powder your hands well with sugar! they froze just fine though.. the finished product was alot smooth and less "make your teeth hurt' sweet.. i think they will melt better, too when stored... all in all a delish recipe! oh, and used 4 cups of chocolate chips instead of two and i omitted the shortening, i just had no need for it...

Soft Christmas Cookies

these were merely ok.. i found they lacked a good sugary flavour and were very bland.. they looked pretty though because i added red and green food colouring to the dough and made pretty xmas cookies... however, they just tasted like playdough with some sugar in it...

Moroccan Chicken

this recipe was perfect! it was definitely spicy, but it had just the right amount of spice so it didn't overpower the wonderful veggie and chicken flavour. i served it over brown rice. delish!

Canadian Molasses Cookies

these were sooo good for being fat free! they are very much molasses cookies and not too sweet.... i added a little extra sugar because i am partial to a sweeter cookie. they tured out perfect, not too crunchy and a nice soft inside. perfect taste! loved them!

Apple and Feta Pan Fried Pizzas

i could not find powdered pizza crust, so i used focacia bread mix... they turned out ok... i would use a tart apple like granny smiths, i used red delicious and the result was too sweet for my taste.. i used more feta than called for because i love feta cheese... the focacia would not make good crust, it plumped up too much and everything just wanted to fall off... i did, however, love the sweet apple taste contrast with the tart feta and the thyme was a wonderful accent... i would definitely try it again with a tarter apple and the right crust... a moderately quick and different from the mainstream meal when you are sick of pasta again.. ;)~

Three Ingredient Peanut Butter Cookies

these cookies are so peanut buttery delicious! and so eay, i made them one handed while holding my 3 month old son.... i baked them for ten minutes, and do not try to get them off the baking sheet until they have cooled somewhat, otherwise they will fall apart, when they cool, they made a crunchy, yummy 15 minute-to-make cookie!

Banana Loaf

this bread was wonderfully moist! i totallly changed a couple things in the recipe, i used 1 cup brown sugar instead of white sugar,, i used whole wheat flour instead of all purpose flour and i added a tsp and a half of vanilla... so the bread was browner... it was very moist and i ate half the loaf before it cooled!

Pumpkin Fudge

on our honeymoon 3 years ago in tennessee, we had the most wonderful pumpkin pie fudge! i have been unable to duplicate it until now! this is the yummiest recipe, it is not that hard to make, but you definitely need the thermometer.. i heated it to 250 by accident and it still turned out wonderful... the first i stirred it as it was simmering by accident and it turned all grainy and wouldn;t harden.. so do make sure you follow the recipe... ;)~

Cranberry-Pumpkin Cookies

these make the yummiest cakeike cookies! i added a little more sugar as my husband likes sweeter cookies... i also put a little cinnamon on top of the finished product... they turned out a beautiful orange colour and we ate them in only a few days! well, i actually think i ate half the batter before even baking the cookies.. ;)~ overall, an easy, gorgeous, delicious cookie!
